Description

These naturally preserved green beans are a simple and delicious way to enjoy the flavors of summer all year round. The recipe is easy to follow and requires only a few ingredients: fresh green beans, water and salt. I often prepare them when I have many green beans from the garden and want to preserve them for the winter. The flavor is delicate and can be used as a side dish or to enrich salads and other dishes. Remember to sterilize the jars well for safe storage! A tip: add a pinch of black peppercorns for an extra touch.

  • Green beans
  • 2.5 l Water
  • 30 g Salt

Preparation of green beans

Wash the green beans thoroughly under running water. Trim the ends and remove any strings. Set aside in a bowl.

Blanch the green beans

Thermomix® Setting

Pour 1 liter of water into the Thermomix bowl. Bring to a boil: 10 Min./100°C/Stufe 1.

Short cooking

Thermomix® Setting
4 min/212°F/Speed 1 100

Add the green beans to the bowl with the boiling water. Cook for 4 Min./100°C/Stufe 1.

Cooling and drying

Drain the green beans and spread them on a clean cloth. Let them cool and dry completely.

Preparation of the brine

Thermomix® Setting
10 min/212°F/Speed 1 100

Pour 1.5 liters of water into the Thermomix bowl. Add 30 g of salt. Bring to a boil: 10 Min./100°C/Stufe 1.

Filling the jars

Arrange the green beans in sterilized glass jars. Be sure not to fill the jars too much, leaving about 1 cm of space from the edge.

Sealing the jars

Pour the boiling brine into the jars, completely covering the green beans. Immediately close the jars with the sterilized lids. Make sure the lids are tightly sealed.

Conservation

Store the jars in a cool, dark place for at least a month before consuming. This time allows the green beans to absorb the flavors of the brine.
