Description

This recipe for Kiachl or farmer's donuts is a hearty dish that is ideal as finger food or a main course. Preparation takes about 60 minutes and the level of difficulty is medium. The recipe is vegetarian and yields 18 servings. The Kiachl are baked in hot oil and are especially delicious with barley soup as an appetizer or cranberry jam or sauerkraut as a side dish.

Ingredients (9 ingredients)

  • 500 g smooth wheat flour
  • 1 Stück Egg
  • 1 Prise Salt
  • 1 TL Butter
  • 3 EL Schnapps
  • 0.25 l lukewarm Milk
  • 0.5 Würfel fresh Yeast
  • Rapeseed oil
  • 2 EL Clarified butter

Prepare dough

Thermomix® Setting

Put 500 g smooth wheat flour, 1 egg, 1 pinch of salt, possibly 1 teaspoon of butter, 3 tablespoons of schnapps, approx. 1/4 l lukewarm milk and 1/2 cube of fresh yeast into the mixing bowl. Knead into a smooth dough with the Patix dough knife for 2 min./kneading stage.

Let the dough rest

Place the dough in a bowl and knead until the dough blisters. Cover and let rest in a warm place until the dough volume has almost doubled.

Form dough pieces

Use a tablespoon to scoop out small piles of dough and form into round balls. Place the balls on a floured baking board. Cover with a dish towel and let rise in a warm place for at least 10 minutes. The volume of the dough piles should double.

Bake Kiachl

Heat plenty of rapeseed oil with 2 tablespoons of clarified butter in a pot - preferably a wok. Add so much oil that the Kiachln float! Pull the dough piles apart in the middle so that the dough is very thin in the middle; the edges should be thick. Place in the hot fat with the top side facing down. While baking, pour some fat over the Kiachl with a spoon. Turn over and bake the Kiachl until done.

Let drain

Lift the Kiachl out of the fat with a sieve skimmer and let drain on kitchen paper.
