Description

I love preparing these fried artichokes! The recipe is very simple and quick, perfect as a tasty appetizer or crispy side dish. Roman artichokes, with their delicate flavor, go very well with the light batter made from eggs and flour. A trick? Immerse the segments in water and lemon to prevent them from blackening. Fried to the right point, they become golden and irresistible. Ideal for a family lunch or a dinner with friends. Try them, they are a real delight!

Ingredients (6 ingredients)

  • 4 piece Roman artichokes
  • 2 piece Medium eggs
  • 80 g 00 flour
  • 1 l Peanut seed oil
  • 1 piece Lemon
  • 1 pinch Salt

Preparation of the artichokes

Clean the artichokes by removing the outer, tougher leaves, cut off the stem, divide them in half and remove any internal fluff. Cut the artichokes into segments and immerse them in a bowl with water and lemon juice to prevent them from blackening. Drain the artichokes well on kitchen paper and dry them perfectly.

Preparation of the batter

In a bowl, break 2 medium eggs, add a pinch of salt and beat them with a fork. In another bowl, put 80 g of 00 flour. Pass the artichoke segments first in the flour and then in the beaten eggs, taking care to cover them evenly.

Frying the artichokes

Heat plenty of peanut seed oil in a high-sided pan. Fry the artichokes a few at a time, turning them often, until they are golden and crispy. Drain them with a slotted spoon and place them on kitchen paper to remove excess oil. Salt lightly and serve the fried artichokes hot.
