Description

This tonka bean panna cotta with apple spice carpaccio is a festive dessert, prepared in the Thermomix®, with tonka bean, cream, milk and apple juice as the main ingredients. This dessert is vegetarian and ideal for special occasions such as Christmas or a fine winter menu. The preparation takes a total of 345 minutes, with the active working time being about 45 minutes. The recipe yields 6 servings.

  • 1 Stück Tonka bean
  • 400 ml Cream
  • 200 ml Milk
  • 80 g Sugar
  • 6 Blatt Gelatin
  • 400 ml Apple juice
  • 2 EL Wildflower honey
  • 3 Stück Cardamom pods
  • 1 Stück Cinnamon stick
  • 1 Stück Vanilla bean
  • 1 EL Cornstarch
  • 2 Stück Apples
  • 60 g Pistachios

Preparation (9 steps)

Grate tonka bean

Grate the tonka bean with a fine grater and set aside.

Prepare cream mixture

Thermomix® Setting
5 min/194°F/Speed 2 90

Put 400 ml cream, 200 ml milk, 80 g sugar and the grated tonka bean zest into the mixing bowl and bring to the boil for 5 min./90°C/speed 2.

Stir in gelatin

Thermomix® Setting
20 sec/Speed 3

Soak 6 sheets of gelatin in cold water. Then squeeze out well and add to the slightly cooled cream mixture. Stir for 20 sec./speed 3 until the gelatin is completely dissolved.

Fill and chill panna cotta

Rinse panna cotta molds or muffin tins with cold water. Pour the cooled cream mixture into the molds and refrigerate for at least 5 hours.

Prepare apple juice spice mixture

Thermomix® Setting
10 min/212°F/Speed 1 100

Put 400 ml apple juice, 2 tbsp wildflower honey, 3 cardamom pods, 1 cinnamon stick and the seeds of a vanilla bean into the mixing bowl. Bring to the boil for 10 min./100°C/speed 1.

Thicken apple juice spice mixture

Thermomix® Setting
5 min/212°F/Speed 1 100

Stir 1 tbsp cornstarch with 2 tbsp cold water until smooth. Stir the hot apple juice spice mixture for 20 sec./speed 3 and slowly add the cornstarch mixture through the lid opening. Simmer for another 5 min./100°C/speed 1.

Prepare apples

Wash 2 apples and cut into thin slices with a slicer or a knife.

Arrange apple carpaccio

Pour the hot spiced stock over the apple slices and let cool. Arrange as carpaccio on plates.

Unmold and garnish panna cotta

Briefly dip the panna cotta molds in hot water up to the rim and invert directly onto the apple carpaccio. Sprinkle with 60 g chopped pistachios and drizzle with some spiced stock.
