Description

This rabbit curry with coconut milk and lime leaves is an exotic main course prepared with the Thermomix®. The dish combines tender rabbit meat with aromatic spices and creamy coconut milk. Preparation takes about 60 minutes and yields 4 servings. Ideal for lovers of Asian cuisine and for special occasions.

  • 500 g Rabbit meat
  • 250 g Onions
  • 2 Stück Garlic cloves
  • 40 g Oil
  • 2 EL Curry paste
  • 1 Stange Leek
  • 1 Stück Red bell pepper
  • 1 Stück Carrot
  • 400 ml Coconut milk
  • 200 ml Game stock
  • 100 ml White wine
  • 1 TL Salt
  • 0.5 TL Pepper
  • 0.5 TL Sugar
  • 4 Stück Lime leaves

Chop onions and garlic

Place 250g onions in the mixing bowl and chop for 3 sec./speed 5. Then add 2 garlic cloves and chop for 3 sec./speed 7.

Sauté onions and garlic

Add 40g oil to the chopped onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add curry paste

Add 2 tbsp curry paste to the onions and garlic in the mixing bowl and sauté for 1 min./120°C/speed 1.

Chop vegetables

Cut 1 leek, 1 red bell pepper and 1 carrot into coarse pieces, place in the mixing bowl and chop for 5 sec./speed 4.

Sauté vegetables

Thermomix® Setting
5 min/248°F/Speed 1 248°F

Add the chopped vegetables to the remaining ingredients in the mixing bowl and sauté for 5 min./120°C/speed 1.

Add liquids

Add 400ml coconut milk, 200ml game stock and 100ml white wine to the mixing bowl.

Season and add lime leaves

Add 1 tsp salt, 1/2 tsp pepper, 1/2 tsp sugar and 4 lime leaves to the mixing bowl.

Simmer curry

Thermomix® Setting
20 min/212°F/Speed 1 212°F

Let everything simmer for 20 min./100°C/speed 1. Leave the measuring cup on.

Sauté rabbit

In a separate pan, sauté 500g rabbit meat with some oil until golden brown.

Add rabbit and finish cooking

Add the sautéed rabbit meat to the mixing bowl and cook for another 10 min./100°C/Reverse speed speed 1. Leave the measuring cup on.

Season and serve

Season the curry with salt, pepper and possibly some lime juice. Serve with rice.
