Description

This hearty potato soup is a savory dish that is especially warming in the cold season. With potatoes, carrots, leek, celery and bacon it is rich and filling. Preparation in the Thermomix® takes about 45 minutes and yields 6 servings. Ideal as a main course for the whole family.

Ingredients (11 ingredients)

  • 1 kg Potatoes
  • 250 g Carrots
  • 250 g Leek
  • 250 g Celery
  • 2 Stück Medium sized onions
  • 2 l Meat broth or ham bone broth
  • Salt
  • Pepper
  • 1 Stück Bay leaf
  • 1 Bund Parsley
  • 125 g Fatty bacon

Preparation (7 steps)

Prepare vegetables

Peel and dice 1 kg potatoes, 250 g carrots, 250 g leek and 250 g celery.

Chop onions

Place 2 medium sized onions in the mixing bowl and chop for 3 sec./speed 5.

Sauté onions

Leave the chopped onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Cook soup

Add 1 kg diced potatoes, 250 g diced carrots, 250 g diced leek, 250 g diced celery, 2 l meat broth or ham bone broth, salt, pepper and 1 bay leaf to the mixing bowl and cook for 25 min./100°C/speed 1.

Prepare bacon

Dice 125 g fatty bacon very finely.

Render bacon

Render the diced bacon in a separate pan.

Refine soup

Pour the finished soup with the rendered bacon and 1 bunch of chopped parsley and serve.
