Description

This classic pound cake is a real all-rounder and simply tastes good to everyone! I have been baking it since my childhood and it is always a hit at birthdays or Sunday brunch. The lemon gives it a wonderfully fresh note that harmonizes perfectly with the buttery consistency. The cake is super easy to prepare and is guaranteed to succeed. If you like, you can sprinkle it with powdered sugar or decorate it with icing. A piece of childhood for every occasion!

Ingredients (8 ingredients)

  • 150 g Butter, soft
  • 150 g Sugar
  • 0.5 tsp Lemon zests
  • 1 tsp Lemon juice
  • 4 piece Eggs
  • 0.5 tsp Baking powder
  • 1 pinch Salt
  • 300 g Flour

Preparation (6 steps)

Preheat oven and prepare tin

Preheat the oven to 160°C top/bottom heat. Grease a pound cake tin (approx. 25 cm) thoroughly and line with baking paper.

Mix butter, sugar and lemon zest

Put 150 g soft butter, 150 g sugar and 0.5 tsp lemon zest in the mixing bowl and stir for 2 min/speed 3 until creamy.

Add lemon juice and eggs

Add 1 tsp lemon juice and 4 eggs one after the other through the lid opening and stir in for 15 sec/speed 3 each time.

Add flour mixture

Mix 300 g flour, 0.5 tsp baking powder and 1 pinch of salt in a separate bowl. Add the flour mixture to the mixing bowl and stir in for 30 sec/speed 4. If necessary, use the spatula to push down from the edge and stir again for 10 sec/speed 4.

Pour the batter into the tin and bake

Pour the batter into the prepared loaf tin and smooth it out. Bake in the preheated oven for approx. 60 minutes. Do a stick test: If no dough sticks to the wooden stick, the cake is ready.

Let the cake cool down

After baking, let the cake cool in the tin for about 10 minutes, then carefully turn it out onto a wire rack and let it cool completely.
