Description

This classic Bloomer bread recipe is prepared with the Thermomix®. The pre-ferment (poolish) provides a great aroma and better shelf life. With a preparation time of about 10 hours (including resting times), it is a project for patient bakers. The bread is ideal as a side dish or for breakfast.

Ingredients (7 ingredients)

  • 140 g Wheat Flour
  • 2 g Dry Yeast
  • 140 ml Lukewarm Water
  • 375 g Wheat Flour
  • 10 g Salt
  • 5 g Dry Yeast
  • 130 ml Lukewarm Water

Preparation (7 steps)

Prepare pre-ferment (poolish)

Put 140 g wheat flour (Type 550 or bread flour), 2 g dry yeast and 140 ml lukewarm water into the mixing bowl and mix for 15 sec/speed 3.

Let the pre-ferment (poolish) mature

Close the mixing bowl and put the pre-ferment in the refrigerator for 7 hours.

Prepare main dough

Put 375 g wheat flour, 10 g salt and 5 g dry yeast into the mixing bowl and mix for 10 sec/speed 4.

Knead the main dough

Add the prepared pre-ferment (poolish) from the refrigerator and 130 ml lukewarm water to the dry ingredients in the mixing bowl and knead for 7 min/kneading stage.

Let the dough rise

Grease a bowl with oil. Place the dough in it, cover and let it rest for 60 minutes.

Shape the dough and let rise again

Divide the dough into pieces of 250 g each. Form balls from them, cover again and let rest for another 50 minutes.

Bake bread

Spray the top of the bread with water, sieve some flour over it and cut the top of the bread. Bake in a preheated oven at 200 °C for 28 to 30 minutes (depending on the oven).
