Description

These cauliflower fritters are an explosion of flavor! I remember my grandmother often preparing them with cauliflower from the garden. The recipe is simple and quick, perfect for a tasty appetizer or a side dish different from the usual. The cauliflower, after being cooked, is flavored with anchovies and then mixed in a light and crispy batter. Fried in boiling oil, the fritters become golden and irresistible. Ideal to enjoy hot, perhaps accompanied by a yogurt sauce or homemade mayonnaise. An original way to make even the little ones eat cauliflower!

Ingredients (9 ingredients)

  • 300 g cooked cauliflower
  • extra virgin olive oil
  • 4 filetti anchovies in oil
  • 2 uova eggs
  • 0.5 tsp fine salt
  • 100 g water
  • 25 g seed oil
  • 8 g instant yeast for savory pies
  • 250 g 00 flour

Preparation (7 steps)

Anchovies in oil

Put 4 fillets of anchovies in oil in the bowl and chop for 5 Sec./Speed 5. Add extra virgin olive oil to taste and sauté for 3 Min./120°C/Speed 1.

Flavored cauliflower

3 min/248°F/Speed 1 120

Add 300 g of cooked cauliflower to the bowl and flavor for 3 Min./120°C/Speed 1. Remove from the bowl and set aside.

Preparation of the batter

Thermomix® Setting

Put 2 eggs, ½ teaspoon of fine salt, 100 g of water and 25 g of seed oil in the bowl. Mix for 20 Sec./Speed 4.

Adding the yeast and flour

Thermomix® Setting
30 Sec./Speed 5

Add 8 g of instant yeast for savory pies and 250 g of 00 flour. Knead for 30 Sec./Speed 5.

Incorporate the cauliflower

Thermomix® Setting
10 Sec./Linkslauf Speed 3 Reverse

Add the flavored cauliflower to the bowl and mix for 10 Sec./Reverse Rotation Speed 3.

Frying the fritters

Heat plenty of seed oil in a pan. With two teaspoons, form the fritters and fry them in the boiling oil, turning them often until golden brown. This step is not performed with the Thermomix.

Drain the fritters

As they are ready, drain the fritters on absorbent paper to remove excess oil. This step is not performed with the Thermomix.
