Description

I love experimenting with unusual ingredients, and this recipe is a hit! Sulphur shelf, also known as "Chicken of the Woods", is transformed here into crispy bites that are reminiscent of fried chicken. The preparation is a bit more elaborate, but the result is worth it. Perfect as finger food for parties or as an unusual appetizer. The dip made from yogurt, mayonnaise and French herb perfectly rounds off the dish. A great dish for anyone who wants to try something new!

Ingredients (9 ingredients)

  • 50 Gramm Yogurt
  • 50 Gramm Mayonnaise
  • 1 Stück Lime
  • 2 Esslöffel Chopped French herb
  • 250 Gramm Sulphur shelf
  • 1 Stück Egg
  • Flour
  • Breadcrumbs
  • Sunflower oil

Prepare dip

Thermomix® Setting
10 sec/Speed 3

Put 50 grams of yogurt, 50 grams of mayonnaise, 2 tablespoons of chopped French herb and the juice of one lime into the mixing bowl and mix for 10 sec./speed 3. Season with a little salt.

Prepare sulphur shelf

Divide 250 grams of sulphur shelf into small, bite-sized portions.

Cook sulphur shelf

Thermomix® Setting
15 min/212°F/Speed 1 100

Place the divided sulphur shelf bites into the simmering basket. Fill 500 ml of water into the mixing bowl, insert the simmering basket and cook for 15 min./100°C/speed 1. Then let the sulphur shelf cool down.

Prepare breading station

Prepare three deep plates. Put some flour on the first plate, a whisked egg on the second and breadcrumbs on the third.

Bread the sulphur shelf

First turn the cooled sulphur shelf bites in the flour, then in the whisked egg and then in the breadcrumbs, so that they are completely covered.

Fry sulphur shelf

Heat sunflower oil in a pan until it has reached approx. 170 degrees. Fry the breaded sulphur shelf bites in portions in the hot oil until golden brown.
