Description

These vegan coconut macaroons with chocolate glaze are a gluten-free and lactose-free dessert that is easy to prepare with the Thermomix®. The main ingredients are shredded coconut, sugar, soy flour, lemon and dark chocolate. Preparation takes about 35 minutes, 20 minutes of which is active work, and yields approximately 30 macaroons. Ideal as Christmas cookies, finger food or a sweet treat in between.

Ingredients (7 ingredients)

  • 1 Stück Organic lemon
  • 200 g Shredded coconut
  • 130 g Sugar
  • 9 EL Soy flour
  • 3 EL Oil
  • 50 g Marzipan raw material
  • 100 g Bittersweet chocolate

Preparation (8 steps)

Grate lemon zest and squeeze juice

Wash the organic lemon with hot water and dry it. Grate the zest of the lemon and squeeze out 1 tablespoon of lemon juice. Set aside the grated lemon zest and lemon juice.

Mix shredded coconut and sugar

Put 200 g shredded coconut, 130 g sugar and the grated lemon zest into the mixing bowl and mix for 10 sec./speed 3.

Mix soy flour and water

Mix 9 tablespoons of soy flour with 200 ml of warm water and 3 tablespoons of oil in a separate bowl.

Add soy flour mixture and lemon juice

Add the soy flour mixture and 1 tablespoon of lemon juice to the shredded coconut in the mixing bowl and mix for 20 sec./speed 4. The dough should be elastic. If necessary, add a little more water.

Knead in marzipan raw material

Cut 50 g of marzipan raw material into small pieces, add to the mixing bowl and knead for 20 sec./reverse rotation speed 3.

Shape and bake macaroons

Preheat the oven to 160 °C. Form approx. 30 small balls from the mixture and place on a baking sheet lined with baking paper. Bake in the preheated oven for about 15 minutes.

Melt chocolate

Thermomix® Setting
3 min/122°F/Speed 2 50

Break 100 g bittersweet chocolate into pieces and put in the mixing bowl. Chop for 5 sec./speed 7. Then melt for 3 min./50°C/speed 2.

Glaze macaroons

Dip the cooled macaroons halfway into the melted chocolate and let them set on a piece of baking paper. Store in a cookie tin until ready to eat.
