Description

This recipe for Köttbullar with mushroom cream sauce is a hearty main course that is ideal for the autumn season. The Köttbullar are made from ground meat, onions and spices and fried in the pan. The creamy sauce is prepared with mushrooms, onions, garlic, vegetable broth and cream.   • 500 g Ground Meat
  • 100 g Onions
  • 1 TL Mustard
  • 0.5 TL Celery Salt
  • Salt
  • Pepper
  • 100 g Onions
  • 1 Stück Clove of Garlic
  • 20 g Oil
  • 250 g Mushrooms
  • 200 ml Vegetable Broth
  • 100 ml Cream
  • 1 TL Guar Gum

Preparation (10 steps)

Chop onions

Put 100g onions in the mixing bowl and chop for 3 sec./level 5.

Mix onions, mustard, celery and spices

Put the chopped onions from the mixing bowl into a bowl. Add 1 tsp mustard, 1/2 tsp celery salt, salt and pepper and mix well.

Prepare ground meat

Put 500g ground meat in a separate bowl and add the onion mixture. Mix well and form small Köttbullar.

Fry Köttbullar

Fry the formed Köttbullar in a separate pan with some oil until golden brown. Then remove from the pan and set aside.

Chop onions and garlic

Put 100g onions and 1 clove of garlic in the mixing bowl and chop for 3 sec./level 5. If necessary, use the spatula to push down from the edge.

Sauté onions and garlic

Add 20g oil to the chopped onions and garlic in the mixing bowl and sauté for 3 min./120°C/level 1.

Add and sauté mushrooms

Add 250g sliced mushrooms to the mixing bowl and sauté for 3 min./120°C/level 1.

Deglaze with broth and cream

Thermomix® Setting

Add 200ml vegetable broth and 100ml cream to the mixing bowl and simmer for 5 min./90°C/level 2.

Thicken sauce

Thermomix® Setting
1 min/194°F/Speed 3 194°F

Add 1 tsp guar gum to the mixing bowl and stir in for 1 min./90°C/level 3 to thicken the sauce.

Add and heat Köttbullar

Thermomix® Setting
5 min/194°F/Linkslauf Speed 1 194°F Reverse

Add the fried Köttbullar to the mixing bowl and heat for 5 min./90°C/reverse rotation level 1. Season with salt and pepper.
