Description

This creamy eggnog, prepared in the Thermomix®, is a festive drink with egg yolks, milk, vanilla sugar and a hint of cinnamon. Refined with whiskey or rum, it warms you on cold winter days. In just 10 minutes, 4 servings of this Christmas dessert are created. Ideal as a warming drink for the whole family or as a sweet ending to a festive menu.

Ingredients (8 ingredients)

  • 4 Stück fresh egg yolks (size M)
  • 1 Pck. Bourbon vanilla sugar
  • 2 EL Sugar
  • 1 l Milk (3.8% fat)
  • 1 Msp. Cinnamon
  • 1 Msp. Cardamom
  • 1 Msp. Cloves (ground)
  • 8 cl Whiskey or Rum

Preparation (4 steps)

Prepare egg yolks

Thermomix® Setting
3 min/Speed 3,5

Add 4 fresh egg yolks (size M), 1 pack Bourbon vanilla sugar and 2 tbsp sugar to the mixing bowl. Insert the butterfly whisk and whisk for 3 min./speed 3.5 until creamy.

Spice and heat the milk

7 min/176°F/Speed 2 80

Add 1 l milk (3.8% fat), 1 pinch cinnamon, 1 pinch cardamom and 1 pinch cloves (ground) to the mixing bowl and heat for 7 min./80°C/speed 2.

Combine milk and egg yolks

Thermomix® Setting
3 min/167°F/Speed 2 75

Slowly pour the hot milk through the lid opening into the egg yolk mixture while the Thermomix is running (speed 2). Then mix everything together for 3 min./75°C/speed 2. Make sure that the mixture does not boil to avoid the egg curdling.

Finish and Serve

Thermomix® Setting
20 sec/Speed 2

Add 8 cl whiskey or rum to the mixing bowl and stir in for 20 sec./speed 2. Immediately divide the eggnog into 4 cups and serve or let cool and enjoy ice-cold.
