Description

This Caesar Salad is a true classic that I always enjoy preparing! The secret lies in the creamy vinaigrette with garlic and anchovies, which gives the romaine lettuce a special touch. Preparation with the Thermomix® is super easy and quick. Perfect as a light appetizer or with fried chicken as a main course. The crispy croutons and freshly grated Parmesan make the salad a taste experience. A great recipe for the summer or a cozy brunch!

Ingredients (9 ingredients)

  • 1 piece Romaine lettuce
  • 50 g Parmesan, freshly grated
  • 3 slice Toast bread
  • 1 piece Egg, raw
  • 3 clove Garlic
  • 4 piece Anchovy fillet, from the jar
  • 2 tsp Dijon mustard
  • 0.5 piece Lemon, juice of it
  • 150 ml Seed oil

Preparation (6 steps)

Prepare romaine lettuce

Wash the romaine lettuce, spin dry and cut into bite-sized pieces. Arrange in a bowl.

Chop garlic

Thermomix® Setting

Cut 3 cloves of garlic into pieces, place in the mixing bowl and chop for 3 sec./level 7. Scrape down with the spatula.

Prepare dressing

20 sec/Speed 5

Add 1 raw egg, 4 anchovy fillets from the jar, 2 tsp Dijon mustard, 0.5 lemon juice and the chopped garlic to the mixing bowl and mix for 20 sec./level 5.

Emulsify dressing

Thermomix® Setting
1 min/Speed 3

With the blade running (level 3), slowly pour 150 ml of seed oil through the lid opening until a creamy sauce has formed. Duration approx. 1 min.

Prepare croutons

Remove the crust from the toast bread, cut into small cubes and fry in a pan with some oil until golden brown and crispy. Season with a clove of garlic as desired.

Arrange salad

Pour the sauce over the salad, mix everything well and serve the salad sprinkled with plenty of 50 g grated Parmesan cheese and the croutons.
