Description

This recipe for roasted rabbit with rosemary and garlic is a hearty main course, ideal for festive occasions. The rabbit is fried in the pan and then braised with vegetables, herbs and white wine in the Thermomix®. The preparation takes about 75 minutes and yields 4 servings. A Mediterranean dish for connoisseurs.

Ingredients (13 ingredients)

  • 1 piece Rabbit (approx. 1.5 kg)
  • 2 Möhren Carrots
  • 1 piece Celeriac
  • 1 piece Onion
  • 2 Zehen Garlic
  • 2 Zweige Rosemary
  • 2 Zweige Thyme
  • 150 ml White wine, dry
  • 200 ml Broth
  • 2 tbsp Olive oil
  • 1 tbsp Cornstarch
  • to taste Salt
  • to taste Pepper

Preparation (8 steps)

Prepare vegetables

Peel the carrots and cut into coarse pieces. Clean the celeriac and cut into pieces as well. Peel and quarter the onion. Peel the garlic.

Chop vegetables

Put the prepared carrots, celeriac, onion and garlic in the mixing bowl and chop for 5 sec./level 5.

Sauté vegetables

Add the olive oil to the chopped vegetables in the mixing bowl and sauté for 3 min./120°C/level 1.

Fry rabbit

Season the rabbit meat with salt and pepper. Fry in a separate pan with a little olive oil until golden brown on all sides.

Add rabbit and remaining ingredients

Add the fried rabbit meat, rosemary, thyme, white wine and broth to the vegetables in the mixing bowl. Season with salt and pepper.

Braise rabbit

50 min/212°F/Linkslauf Speed 1 212°F Reverse

Close the mixing bowl lid and let the rabbit braise for 50 min./100°C/reverse level 1. Leave the measuring cup on.

Thicken sauce

5 min/212°F/Speed 2 212°F

After the cooking time has elapsed, mix the cornstarch with a little cold water and add to the mixing bowl. Cook for another 5 min./100°C/level 2 without reverse until the sauce has reached the desired consistency. Leave the measuring cup on.

Season and serve

Season the roasted rabbit with rosemary and garlic again with salt and pepper and serve.
