About this recipe

Lasagne, a classic of Italian cuisine, has a firm place in my family. I still remember my grandma standing in the kitchen for hours to conjure up the perfect Bolognese. This recipe is a tribute to her culinary skills, simplified by the Thermomix®, without losing the authentic taste. The secret of a good lasagne lies in the ingredients. The minced meat, preferably mixed, provides the hearty base of the Bolognese. The onions, both in the red and white sauce, give a pleasant sweetness and spice. The canned chopped tomatoes bring fruitiness and acidity to the sauce, while the ketchup adds extra sweetness and depth. The lasagne mix ensures a simple binding of the sauce, but be sure to add some water so that it does not become too thick. The light sauce, based on milk and light sauce base from Knorr, is made particularly creamy and rich by the Hollandaise. The cheese, ideally a mixture of mozzarella and grated hard cheese, provides the golden brown crust and the irresistible taste. When preparing in the Thermomix®, it is important not to chop the onions too finely, otherwise they may burn during sautéing. Make sure that the temperature when simmering the sauces is not set too high to avoid burning. The cooking time of the lasagne may vary depending on the oven. Check regularly whether the pasta is cooked and the crust has reached the desired browning. For a vegetarian version, the minced meat can be replaced with soy granules or lentils. To make the lasagne vegan, plant-based alternatives can be used for minced meat, milk, Hollandaise and cheese. Experiment with different spices to suit your personal taste. Paprika powder, garlic or chili can give the Bolognese an extra touch. The lasagne tastes best when it comes fresh from the oven. Let it rest briefly before cutting so that it can be cut better. This is accompanied by a fresh salad with a light vinaigrette dressing. A glass of red wine rounds off the dish perfectly. Leftovers of the lasagne can be stored in the refrigerator and reheated the next day. The lasagne can also be prepared well in advance. Layer it the day before and bake it just before serving. This saves you time and you can receive your guests in a relaxed manner.
