This Bolognese lasagna is a true triumph of flavors! The recipe, handed down in my family, includes a rich and flavorful ragu, a velvety béchamel and the addition of fresh spinach in the dough for a touch of extra color and flavor. Perfect for special occasions or for a Sunday lunch with the family, this lasagna requires a bit of time, but the result is guaranteed. The ragu cooks slowly for hours, releasing an irresistible scent. The béchamel, prepared with the Thermomix®, is smooth and creamy. Wash the spinach. Put the spinach in the Mixtopf and cook for 7 Min./100°C/Stufe 1.

Drain the cooked spinach well. Put the drained spinach and eggs in the Mixtopf and blend for 10 Sek./Stufe 5.

Dough for the pasta

In a bowl, combine the re-milled semolina, 00 flour, a pinch of salt and the mixture of blended eggs and spinach. Mix well.

Kneaded and rested dough

Knead the dough by hand until it is smooth and elastic. Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.
