Description

This mussel lasagna with saffron is a true delight and perfect for special occasions! The combination of tender mussels, aromatic saffron and fresh herbs makes this dish an unforgettable experience. I like to make this lasagna when I want to cook something special for my family or friends. The preparation is a bit more complex, but the result is worth it. The lasagna tastes especially good when served with a dry white wine. A touch of luxury for everyday life!

Ingredients (11 ingredients)

  • 3 kg Mussels
  • 2 piece Shallots
  • 10 Stiele Thyme
  • 50 g Parmesan in one piece
  • 300 ml dry White wine
  • 30 g Butter or margarine
  • 20 g Flour
  • 2 Prise(n) Saffron threads
  • 150 g Whipping cream
  • Salt
  • Pepper

Preparation (6 steps)

Prepare shallots and Parmesan

Thermomix® Setting
3 sec/Speed 5, 10 sec/Speed 8

Peel the shallots and put them in the mixing bowl. Chop 3 sec./level 5. Add Parmesan in pieces to the mixing bowl and grate 10 sec./level 8. Transfer and set aside.

Cook mussels

Thermomix® Setting
5 min/212°F/Speed 1, 8 min/212°F/Linkslauf Speed 1 100 Reverse

Put 300 ml white wine and the chopped shallots in the mixing bowl. Boil 5 min./100°C/level 1. Add 3 kg of mussels and 2 sprigs of thyme and cook for 8 min./100°C/reverse rotation level 1 until the mussels open. Place mussels and cooking liquid in a sieve, collecting the broth. Discard unopened mussels.

Prepare saffron sauce

Thermomix® Setting
2 min/122°F/Speed 1, 2 min/212°F/Speed 2, 4 min/194°F/Speed 2, 1 min/194°F/Speed 2 50

Put 30 g butter or margarine in the mixing bowl and melt for 2 min./50°C/level 1. Add 20 g flour and sauté for 2 min./100°C/level 2. Add the collected mussel stock, 2 pinches of saffron threads and the leaves of 2 thyme sprigs. Simmer for 4 min./90°C/level 2. Add 150 g whipping cream and stir in for 1 min./90°C/level 2. Season with salt and pepper.

Add mussels to the sauce

Thermomix® Setting
30 sec/Linkslauf Speed 1 Reverse

Remove mussels from their shells. Add the mussel meat to the sauce in the mixing bowl and stir in for 30 sec./reverse rotation level 1. Keep warm.

Cook lasagna sheets

Bring a large pot of salted water to a boil. Cook the pasta sheets (in 3 portions) in it for about 4 minutes. Drain.

Layer lasagna

Layer 3 lasagna sheets on a plate alternately with mussels and sauce. Layer the remaining pasta sheets, mussels and sauce in the same way. Sprinkle with grated Parmesan and garnish with remaining thyme sprigs.
