Description

This creamy lasagna with fresh asparagus is an absolute highlight in the spring! I always make it when asparagus is in season. The combination of tender asparagus tips, creamy béchamel sauce and spicy cheese is simply unbeatable. The preparation is a bit more complex, but it is definitely worth it. Perfect for a festive lunch or a cozy dinner with friends and family. If you like, you can add some smoked ham, but even vegetarian, this lasagna is a poem. A touch of nutmeg in the béchamel perfectly rounds off the dish.

Ingredients (10 ingredients)

  • Fresh lasagna sheets
  • Asparagus
  • Grated Parmesan cheese
  • Butter
  • 0.5 piece Onion
  • to taste Extra virgin olive oil (EVO)
  • to taste Salt
  • Flour 00
  • Butter
  • Meat broth

Preparation (7 steps)

Prepare asparagus

The asparagus cleaned in salted boiling water for 7 minutes. Then in water and ice to fix the color. Remove and set aside.

Sauté onion

Half an onion in the bowl and chop for 3 Sek./Stufe 5. Add extra virgin olive oil and sauté for 3 Min./120°C/Stufe 1.

Cook asparagus

Thermomix® Setting
5 min/212°F/Speed 1 100

Add the asparagus to the bowl and cook for 5 Min./100°C/Stufe 1. Adjust salt.

Prepare béchamel

Thermomix® Setting
8 min/194°F/Speed 4 90

In the cleaned bowl, put butter and flour and mix for 20 Sek./Stufe 3. Add meat broth and cook for 8 Min./90°C/Stufe 4.

Layer lasagna

On the bottom of a baking dish put a spoonful of béchamel, a layer of pasta, then the asparagus with the Parmesan cheese and continue like this until all the ingredients are finished. On the last layer put some flakes of butter and more Parmesan cheese.

Bake lasagna

Bake in a preheated oven at 180 degrees for about 25 minutes.

Serve lasagna

Remove from the oven and wait a few minutes before cutting and serving your creamy asparagus lasagna.
