Description

This autumnal lasagna with pumpkin and mushrooms is a real comfort food! The sweetness of the pumpkin blends perfectly with the earthy flavor of the mushrooms, creating a creamy and enveloping filling. Preparing it is easier than you think, especially with the help of our faithful Thermomix®. I often prepare it when I have guests for dinner, because it can be prepared in advance and baked at the last moment. A tasty and flavorful vegetarian alternative, perfect for autumn evenings. Ingredients (14 ingredients)

  • Sheets of fresh egg pasta
  • Pumpkin
  • Mushrooms
  • 1 piece Small onion
  • Béchamel sauce
  • Parmigiano Reggiano
  • Edamer
  • Extra virgin olive oil
  • 50 g Butter
  • 50 g Flour
  • 500 ml Milk
  • 1 pinch Nutmeg
  • 1 pinch Pepper
  • Salt

Preparation (6 steps)

Preparation of the sauté

Thermomix® Setting
3 min/248°F/Speed 1 120

A small onion in the bowl and chop for 3 Sec./Level 5. Add a nice drizzle of extra virgin olive oil and sauté for 3 Min./120°C/Level 1.

Cooking pumpkin and mushrooms

15 min/212°F/Speed 1 100

Add the diced pumpkin and sliced mushrooms to the bowl. Add salt and cook for 15 Min./100°C/Level 1. Check that the vegetables have wilted, otherwise prolong the cooking for a few minutes.

Preparation of the béchamel

In the clean bowl, put 50 g of butter and melt for 2 Min./50°C/Level 2.

Cooking the béchamel

10 min/194°F/Speed 3 90

Add 50 g of flour, 500 ml of milk, a pinch of nutmeg, salt and pepper. Cook for 10 Min./90°C/Level 3. Mix well with the spatula to avoid lumps.

Assembling the lasagna

On the bottom of a baking dish, put a ladle of béchamel, then the sheets of fresh egg pasta, then a spoonful of vegetables. Add a ladle of béchamel, some diced edamer cheese and a sprinkling of grated Parmesan cheese. Continue repeating the same operations until all the ingredients are used up.

Baking in the oven

Bake at 180 degrees for 20 minutes.
