Description

This vegetarian lasagna with fresh vegetables is a hearty casserole from the Thermomix®. Onions, garlic, peppers, zucchini and carrots form the basis for the Italian specialty.   • 2 Zehen Garlic
  • 600 g Vegetables (e.g. peppers, zucchini, carrots)
  • 1 tbsp Olive oil
  • 2 tbsp Tomato paste
  • 800 g Peeled tomatoes (canned)
  • 2 tbsp Chopped parsley
  • 1 tbsp Sweet paprika powder
  • to taste Salt
  • to taste Pepper
  • 12 piece Lasagna sheets
  • 150 g Grated cheese (e.g. Mozzarella)
  • 50 g Butter
  • 40 g Flour
  • 600 ml Milk

Chop onion and garlic

Put 1 peeled onion in the mixing bowl and chop for 3 sec./speed 5. Add 2 cloves of garlic and chop for 3 sec./speed 7. Use the spatula to push everything down from the edge.

Preheat oven

Layer lasagna

Pour a layer of vegetable sauce into a baking dish. Alternately layer lasagna sheets (12 pieces), vegetable sauce and béchamel sauce, ending with the béchamel sauce.

Cover the vegetable lasagna with 150 g grated cheese (e.g. Mozzarella) and bake in the preheated oven for 30 minutes.

My version is a tribute to vegetarian diversity, a way to combine fresh vegetables in a hearty and filling dish. The basis of this lasagna is onions and garlic, which are sautéed in olive oil. They provide an aromatic base on which the flavors of the other vegetables can unfold. Peppers, zucchini and carrots add color, texture and sweetness to the dish. The peppers contribute a slightly smoky note, the zucchini provides a delicate consistency and the carrots bring a pleasant sweetness and crispness. The tomato paste is roasted to intensify its flavors and give the sauce a deeper color. The canned tomatoes form the basis of the sauce and are seasoned with parsley, paprika, salt and pepper. The Thermomix® is an invaluable aid here. It chops the vegetables quickly and evenly, which ensures a harmonious texture of the sauce. When sautéing and simmering, it is important to keep an eye on the temperature to avoid burning. The béchamel sauce, a creamy roux with milk, is also prepared in the Thermomix®. Here it is important to melt the butter well and sweat the flour before adding the milk to avoid lumps. For a vegan version, the béchamel sauce can be replaced with a cashew cream or a plant-based alternative. The cheese can also be replaced with a vegan cheese alternative or omitted altogether. There are no limits to the imagination when it comes to spices. Oregano, thyme or rosemary go perfectly with this dish. If you like it a little spicier, you can add a pinch of chili powder. The finished lasagna can be served with a fresh salad. A green salad with a light vinaigrette dressing or a tomato salad with basil go perfectly with it. A piece of crispy bread is also a welcome side dish. The lasagna can be prepared well in advance and stored in the refrigerator. It can also be frozen in portions. Before serving, it should be warmed up in the oven.
