Description

This quick and easy sautéed greens dish is a flavorful and healthy option for a weeknight meal. The combination of Savoy cabbage, purple sprouting broccoli, and baby spinach creates a vibrant and nutritious side dish or light main course. Ingredients (7 ingredients)

  • 0.5 piece Savoy cabbage
  • 125 g purple sprouting broccoli
  • 2 tbsp groundnut oil
  • 4 clove garlic cloves
  • 75 g baby spinach
  • 2 tbsp fish sauce
  • 1 tsp caster sugar

Prepare the vegetables

Remove any discolored or coarse leaves from the Savoy cabbage, then halve it. Remove the hard central ribs and discard them, then shred the leaves. If using purple sprouting broccoli, halve any thicker stems lengthways.

Sauté broccoli

Add 2 tbsp groundnut oil to the mixing bowl and heat for 3 Min./120°C/Stufe 1. Add 125g purple sprouting broccoli and sauté for 1 Min./120°C/Stufe 1.

Add garlic and cabbage

Add 4-6 garlic cloves and shredded Savoy cabbage to the mixing bowl and cook for 3 Min./120°C/Stufe 1 until the garlic is a pale gold color.

Add spinach and fish sauce

Thermomix® Setting
1 min/212°F/Speed 1 100

Quickly add 75g baby spinach and 2 tbsp fish sauce to the mixing bowl and cook for 1 Min./100°C/Stufe 1. Ensure the vegetables are turned over to allow the moisture to boil off quickly.

Add sugar and toss

Thermomix® Setting
30 Sec./212°F/Speed 1 100

Add 1 tsp caster sugar to the mixing bowl and toss the vegetables again for 30 Sec./100°C/Stufe 1. Add a little more fish sauce, if you like.
