Description

This lemon frangipane casserole is a poem! The combination of the tart lemon and the sweet, almondy frangipane is simply irresistible. I especially like to make it in the spring when the lemons are at their juiciest. The preparation is a bit more complex, but the result is well worth it. The casserole is perfect for a cozy brunch or as a sweet end to a festive meal. If you like, you can serve it with a dollop of whipped cream. An absolute highlight for all cake lovers!

Ingredients (12 ingredients)

  • 3 piece Eggs (size M)
  • 80 g soft butter
  • 1 piece grated zest of organic lemon
  • 110 g Sugar
  • 1 pinch Salt
  • 20 g Flour
  • 30 g ground almonds
  • 1 Msp. Baking powder
  • 400 ml Milk
  • 80 ml Lemon juice
  • 1 tbsp Icing sugar
  • Whipped cream for garnish

Preparation (7 steps)

Separate eggs and whisk egg whites until stiff

Separate eggs. Put the egg whites in a separate bowl and set aside. Clean and dry the mixing bowl. Add the egg whites to the mixing bowl and whisk with the butterfly attachment for 3 minutes/speed 3.5. Transfer and set aside.

Mix butter, lemon zest, sugar and salt

Put 80 g soft butter, the grated zest of 1 organic lemon, 110 g sugar and 1 pinch of salt in the mixing bowl and stir for 2 minutes/speed 3 until creamy.

Stir in egg yolks

Add the 3 egg yolks one after the other and stir in for 20 seconds/speed 3 each time.

Mix flour, almonds and baking powder and stir in

Stir in milk and lemon juice

Add 400 ml milk and 80 ml lemon juice to the mixing bowl and stir in for 30 seconds/speed 3.

Fold in beaten egg whites

Carefully fold the beaten egg whites into the mixture with a spatula.

Baking

Pour the mixture into a greased baking dish (approx. 1.5 l capacity). Bake in a preheated oven (electric oven: 180 °C/fan oven: 160 °C) for about 35 minutes until golden brown. Remove and dust with 1 tablespoon of icing sugar while still warm.
