Description

This lemon garlic chicken from the Thermomix® is amazing! Juicy chicken breast, refined with fresh lemon and a good portion of garlic - simple, but ingenious. The tagliatelle from the refrigerated section perfectly soaks up the creamy sauce. The secret lies in the combination of paprika, pepper and the fresh lemon aroma, which gives the dish a light, summery note. The sauce is made nice and creamy with butter, shallots and a touch of flour. Perfect for a quick weeknight dinner when you need something quick. Even cooking beginners can conjure up a delicious dish in no time that is guaranteed to please everyone. If you like it even more lemony, you can add an extra squeeze of lemon juice at the end. Simply delicious!

  • 20 g Parsley leaves
  • 500 g Chicken breast fillet
  • Salt
  • to taste Freshly ground black pepper
  • 3 tsp Sweet paprika powder
  • 1 piece Untreated lemon, in slices
  • 500 g Tagliatelle (refrigerated section)
  • 1 tsp Vegetable spice paste
  • 4 piece Garlic cloves
  • 2 piece Shallots
  • 25 g Butter
  • 20 g Wheat flour Type 405
  • 200 g Cream
  • 0.5 piece Juice from lemon

Chop parsley

Put 20 g of parsley leaves into the mixing bowl and chop for 3 seconds/speed 8. Transfer and set aside.

Prepare chicken and fill Varoma

Season 500 g of chicken breast fillet with 2 pinches of salt and pepper each, as well as 2 tsp of sweet paprika powder and place in the Varoma covered with lemon slices from 1 untreated lemon. Spread 500 g of tagliatelle on the insert and moisten briefly under running water. Place in the Varoma and set aside, closed.

Put 500 g of water and 1 tsp of vegetable spice paste into the mixing bowl, attach Varoma, cook everything for 27 min./Varoma/speed 1. Remove Varoma and keep warm. Empty the mixing bowl and collect the cooking liquid.

Put 4 garlic cloves and 2 shallots in the mixing bowl and chop for 5 seconds/speed 5. Scrape down with the spatula. Add 25 g of butter and sauté for 3 min./120°C/speed 1. Add 20 g of wheat flour type 405 and sauté for 2 min./100°C/speed 1.

Add 100 g of cooking liquid, 200 g of cream, juice from ½ lemon, chopped parsley, 1 tsp of sweet paprika powder, 1 ½ tsp of salt and ½ tsp of freshly ground black pepper and bring to the boil for 6 min./98°C/speed 2.

About this recipe

This lemon garlic chicken is a real staple at our house. It came about from the desire to conjure up a quick, yet aromatic dish that would delight both children and adults. I was inspired by classic Italian cuisine, which often gets by with just a few high-quality ingredients and delivers incredibly delicious results. The list of ingredients is deliberately kept clear. The chicken breast fillet forms the base and is wonderfully seasoned by the marinade of salt, pepper and paprika powder. The fresh lemon slices, which lie on the chicken during cooking, not only give off a great aroma, but also ensure that the meat remains juicy. The garlic, of course in generous quantities, contributes a pleasant spiciness and flavor that harmonizes perfectly with the acidity of the lemon. The tagliatelle from the refrigerated section are ideal because they cook quickly and absorb the creamy sauce perfectly. When preparing in the Thermomix®, it is important to chop the parsley really finely so that it is well distributed in the sauce. When seasoning the chicken, be generous, but make sure that the paprika powder is sweet to avoid a bitter note. Sautéing the shallots and garlic in butter is crucial for the taste of the sauce. You shouldn't skimp here and stick to the time indicated so that the flavors can develop optimally. The cooking liquid that is created when steaming the chicken is worth its weight in gold! It already contains many aromas and gives the sauce a special depth. If you want to prepare the dish vegetarian or vegan, you can simply replace the chicken breast fillet with tofu or halloumi. Instead of cream, you can also use plant-based alternatives such as cashew cream or soy cream. For a different flavor, you can also add fresh herbs such as rosemary or thyme to the sauce. A touch of chili also provides a pleasant spiciness. The lemon garlic chicken tastes best when it is freshly prepared. A green salad or steamed vegetables go perfectly as a side dish. If you like it a little more hearty, you can sprinkle roasted pine nuts or Parmesan over the dish. Leftovers of the dish can easily be stored in the refrigerator. It tastes almost even better the next day, as the flavors have then really infused. To heat up, simply heat in the microwave or in a pan with a little water. The dish can also be prepared well in advance. The chicken can be marinated the day before and placed in the Varoma. The sauce can also be prepared and stored in the refrigerator. Simply heat up before serving and mix with the freshly cooked tagliatelle.
