This Thermomix® recipe for stuffed ground beef meatballs in the Greek style combines ground beef with sheep's cheese and fresh herbs into a protein-rich main course or finger food. Ingredients (12 ingredients)

  • 500 g Ground beef
  • 100 g Sheep cheese
  • 2 piece Eggs size M
  • 1 piece Onion, medium-sized
  • 30 g Smooth parsley, fresh
  • 3 4 Sprigs oregano, fresh
  • 2 tbsp Breadcrumbs
  • 1 Spritzer Lemon juice, fresh
  • 1 tsp Cumin, ground
  • 1 tsp Salt
  • 0.5 tsp Pepper
  • 3 tbsp Olive oil

Preparation (6 steps)

Chop onion

Place 1 medium-sized onion in the mixing bowl and chop for 3 sec./speed 5. Scrape down with the spatula.

Sauté onion

Remove the chopped onion from the mixing bowl and sauté in a pan with a little oil. Set aside.

Chop parsley and oregano

Put 30 g smooth parsley and 3-4 sprigs of oregano in the mixing bowl and chop for 3 sec./speed 6. Scrape down with the spatula.

Prepare ground beef mixture

Put 500 g ground beef (or 1/2 beef, 1/2 pork), the sautéed onions, 2 eggs, 2 tbsp breadcrumbs, the chopped parsley and oregano, 1 tsp cumin, 1 tsp salt, 1/2 tsp pepper and 1 splash of lemon juice in a bowl and mix well.

Shape and fill Bifteki

Form approx. 12 balls (approx. 60g each) from the ground beef mixture. Press a hole into each ball, put in some 100 g sheep cheese, close the hole and flatten the ball a little.

Fry Bifteki

Heat 3 tbsp olive oil in a pan and fry the Bifteki on each side for approx. 6 minutes over medium heat until cooked through.

Stuffed ground beef meatballs in the Greek style, or Bifteki as they are called in Greece, are a reminder of sunny vacations on the Mediterranean for me. I still remember the scent of oregano and grilled meat wafting through the streets as we searched for the perfect dinner. This recipe is my homage to those experiences, adapted for easy preparation with the Thermomix®. The secret to good Bifteki lies in the quality of the ingredients. The ground beef should not be too lean, as a little fat ensures juiciness. The sheep's cheese, ideally a Greek Feta, brings the typical salty and slightly sour note that harmonizes so well with the spicy meat. Fresh herbs are essential: parsley for freshness and oregano for the Mediterranean aroma. Cumin, salt and pepper round it all off and give the meatballs a pleasant spice. A splash of lemon juice provides a slight acidity that balances the dish wonderfully. The breadcrumbs serve as a binding agent and give the mixture the necessary firmness. The Thermomix® makes preparation much easier. First, the onions are finely chopped, saving time and tears. Then the herbs are chopped, allowing them to develop their full aroma. Sautéing the onions in the pan is important because raw onions would have too sharp a taste in the meatball. Be careful not to brown the onions, but only to let them become translucent. When mixing the ground beef mixture, it is important not to knead for too long, otherwise the meatballs can become tough. The mixture should be mixed just long enough until all the ingredients are well combined. When forming the meatballs, it helps to moisten your hands slightly so that the mixture does not stick. Make sure that the sheep's cheese is completely enclosed by the ground beef mixture so that it does not run out during frying. For a vegetarian version, you can replace the ground beef with a mixture of lentils, rice and finely chopped vegetables. Instead of sheep's cheese, you can also use a vegan cheese alternative. There are no limits to your imagination when it comes to spices. A little garlic, paprika powder or a pinch of chili will add extra spice. Bifteki taste great with a Greek salad (Horiatiki), Tzatziki and crispy bread. Rice or potatoes also go well with it. You can serve the meatballs warm or cold, as a main course or as part of a Mezze platter. The finished meatballs can be stored in the refrigerator and consumed within 2-3 days. They can also be frozen well. For stress-free preparation, you can prepare the ground beef mixture the day before and store it in the refrigerator. This gives the flavors time to develop.
