Description

This Thermomix® recipe for lemon mousse with meringues is a refreshing treat made from lemon, yogurt and cream. Preparation in the Thermomix® takes about 160 minutes, of which 40 minutes are active work time. The dessert is ideal for festive occasions or as a summer dessert. The recipe makes 8 servings and is suitable for anyone looking for an easy and delicious dessert.

Ingredients (9 ingredients)

  • 4 Stück Lemons, rinsed hot
  • 1 Stück Lemon, rinsed hot, grated peel
  • 100 g Sugar
  • 1.5 EL Cornstarch
  • 2 EL Water
  • 200 g Plain yogurt
  • 2.5 dl Full cream, stiffly beaten
  • 0.5 Pack Pack dark cake glaze à 125 g
  • 4 Stück Meringues

Preparation (9 steps)

Prepare lemons

Halve the lemons and carefully squeeze out the juice (yields approx. 150 ml). Use a spoon to scrape out the remaining pulp and membranes, being careful not to damage the peel. Cut away a little of the lemon base to ensure it stands well.

Boil lemon juice

Place lemon juice, grated lemon zest and sugar in the mixing bowl and cook for 5 min./100°C/speed 2.

Stir in cornstarch

Stir the cornstarch and water until smooth in a bowl. Add the mixture to the mixing bowl and stir in for 3 min./100°C/speed 2. Leave the measuring cup in place.

Pass the mixture and cool

Strain the mixture through a sieve and leave to cool, covered.

Prepare mousse

Put the cooled mixture into the mixing bowl. Add natural yogurt and stiffly beaten full cream and stir for 20 sec./speed 3. Use a spatula.

Fill and cool mousse

Fill the mousse into the lemon halves and refrigerate for 2 hours.

Melt cake glaze

Melt the cake glaze according to the package instructions.

Prepare meringues

Dip meringue bases in the liquid chocolate and let dry on a cake rack. Halve the meringues.

Arrange

Arrange the mousse with the meringues.
