Description

This lentil-pumpkin stew with halloumi is a vegetarian main course that is ideal for the autumn season. With a preparation time of about 45 minutes, it is easy to prepare and offers a filling meal for 4 people. The stew is rich in vegetables, lentils and is perfectly complemented by the fried halloumi. It is spicy, hearty and a healthy option for lunch or dinner.

Ingredients (14 ingredients)

  • 2 piece Onions
  • 2 Zehen Garlic
  • 2 tbsp Olive oil
  • 400 g Pumpkin
  • 2 piece Carrots
  • 1 Stange Celery stalk
  • 150 g red Lentils
  • 400 ml Vegetable broth
  • 400 g chopped Tomatoes (can)
  • 1 tsp Curry powder
  • 0.5 tsp Cumin
  • to taste Salt
  • to taste Pepper
  • 200 g Halloumi

Preparation (7 steps)

Chop onions and garlic

Add 2 peeled and quartered onions to the mixing bowl and chop for 3 sec./level 5. Add 2 cloves of garlic and chop for 3 sec./level 7.

Sauté the vegetables

Add 2 tbsp olive oil to the mixing bowl and sauté for 3 min./120°C/level 1.

Add pumpkin, carrots and celery

Add 400 g pumpkin (cored and diced), 2 carrots (peeled and sliced) and 1 stalk of celery (sliced) to the mixing bowl and chop for 5 sec./level 4.

Add lentils and spices

Thermomix® Setting

Add 150 g red lentils, 400 ml vegetable broth, 1 can of chopped tomatoes (400g), 1 tsp curry powder, 1/2 tsp cumin, salt and pepper to taste to the mixing bowl and cook for 20 min./100°C/reverse rotation level 1.

Prepare halloumi

While the stew is cooking, cut 200 g halloumi into slices.

Fry halloumi

Fry the halloumi in a separate pan with a little olive oil until golden brown.

Season and serve stew

Season the stew with salt and pepper. Arrange the fried halloumi on top of the stew and serve.
