Description

This lentil soup is a true culinary delight and warms you from the inside out! I especially like to make it when it gets colder outside. The combination of brown champagne lentils, root vegetables and a hint of balsamic vinegar makes it something special. The preparation is a little more complex, but it's worth it! The soup is vegetarian and can be prepared well in advance. If you like it more hearty, you can add some smoked bacon. A great dish for a cozy evening!

Ingredients (9 ingredients)

  • 200 g Lentils brown champagne lentils
  • 300 g Potato(es)
  • 100 g Carrot(s)
  • 100 g Celeriac
  • 100 g Leek
  • 500 ml Vegetable broth
  • 500 ml Beef broth
  • 1 tbsp Butter
  • 3 tbsp Balsamicobianco

Preparation (6 steps)

Prepare vegetables

Cut the carrot, celery and leek into tiny cubes. Cut the potatoes into cubes with an edge length of no more than 5 mm. Perform this step without Thermomix.

Cook lentils

Thermomix® Setting
30 min/212°F/Speed 1 100 Reverse

Put 200 g lentils brown champagne lentils and 500 ml vegetable broth into the mixing bowl and simmer for 30 min./100°C/speed 1 reverse.

Sauté vegetables

Put 1 tbsp butter in the mixing bowl and melt for 2 min./120°C/speed 1. Add 100 g carrot(s), 100 g celeriac and 100 g leek and sauté for 3 min./120°C/speed 1.

Add potatoes and broth

Put 300 g potato(es) and 500 ml beef broth into the mixing bowl and simmer for 5 min./100°C/speed 1.

Add lentils and mix

Thermomix® Setting
1 min/Speed 1 Reverse

Add the cooked lentils from the mixing bowl to the mixing bowl with the vegetables and mix for 1 min./speed 1 reverse.

Season the soup with 3 tbsp Balsamicobianco and stir in for 30 sec./speed 1 reverse.
