Description

This lime pistachio cake is a real eye-catcher on any coffee table! The combination of the sour aroma of lime and the nutty taste of pistachios is simply irresistible. I particularly like to bake this cake in the spring, when the limes are particularly juicy. The cake is super easy to prepare with the Thermomix® and is guaranteed to succeed. The addition of white chocolate makes it particularly juicy and gives it a fine sweetness. Perfect for birthdays, brunch or just for enjoying!

Ingredients (14 ingredients)

  • 400 g Flour
  • 1 Prise(n) Salt
  • 200 g Sugar
  • 1 Pck. Baking powder
  • 1 Pck. Vanilla sugar
  • 6 piece Egg(s) size M
  • 165 g Butter soft
  • 150 g Chocolate, white
  • 100 g Pistachios whole, unsalted
  • 2 piece Lime(s)
  • 3 tbsp Rum
  • Milk
  • Butter for greasing the pan
  • Sprinkles for dusting the pan

Preparation (7 steps)

Prepare baking pan

Grease a cake tin with some butter and sprinkle with sprinkles. This makes it easier to remove the cake from the tin after baking.

Mix dry ingredients

Thermomix® Setting
10 sec/Speed 4

Put 400 g flour, 1 pinch salt, 200 g sugar, 1 packet baking powder and 1 packet vanilla sugar into the mixing bowl and mix for 10 sec/speed 4.

Beat butter and eggs until fluffy

Thermomix® Setting
2 min/Speed 4

Add 165 g soft butter and 6 eggs size M to the mixing bowl and whisk for 2 min/speed 4 until fluffy. Add each egg individually through the lid opening for approx. 30 seconds.

Add lime zest and juice

Thermomix® Setting
10 sec/Speed 3

Grate the zest of 2 limes and add to the mixing bowl together with the lime juice. Stir for 10 sec/speed 3.

Chop chocolate and pistachios

Thermomix® Setting
5 sec/Speed 5

Put 150 g white chocolate and 100 g unsalted pistachios into the mixing bowl and chop for 5 sec/speed 5. Then transfer.

Stir in flour mixture and remaining ingredients

Thermomix® Setting
20 sec/Speed 4

Add the flour mixture from step 2, 3 tbsp rum and the chopped chocolate and pistachios to the mixing bowl and stir for 20 sec/speed 4. If necessary, add some milk if the dough is too firm.

Bake dough

Pour the dough into the prepared cake tin and bake in a preheated oven at 175 degrees top/bottom heat for approx. 50 minutes.
