Description

This lentil stew with parsnip and kombu seaweed is a comforting and nutritious recipe, perfect for cold days. The parsnip gives it a sweet and slightly spicy touch that combines very well with the earthy flavor of the lentils. The kombu seaweed, in addition to providing minerals, helps make the lentils more digestible. I usually prepare a good amount to have for several days, and thus save time in the kitchen! It is an ideal dish for vegetarians and vegans, and can be easily adapted to a gluten-free diet. Go ahead and try it, you'll love it!

Ingredients (11 ingredients)

  • 750 g Lentils
  • 1 piece onion
  • 6 piece carrots
  • 1 piece parsnip
  • 1 piece Kombu seaweed
  • 2 piece potatoes
  • 1 hoja bay leaf
  • 1 pastilla chicken broth
  • to taste Salt
  • Olive oil
  • Water for cooking

Preparation (10 steps)

Soaking the lentils

Leave the lentils to soak overnight in a container with water.

Cleaning the lentils

The next day, clean the lentils very well under the tap and drain them.

Initial preparation in the Thermomix

Pour the drained lentils into the Thermomix bowl and cover with water. Peel the onion and add it whole to the bowl, along with the bay leaf.

First cooking of the lentils

Program the Thermomix to cook the lentils at 100°C, speed 1, for 20 minutes.

Preparation of the vegetables

While the lentils are cooking, peel and cut the carrots and parsnip into medium pieces.

Add vegetables and seasonings

Add the carrots and parsnip to the Thermomix bowl. Cover with a little more water if necessary. Add salt to taste, the crumbled chicken broth tablet, a splash of olive oil and the kombu seaweed cut into small pieces.

Final cooking of the stew

60 min/208°F/Speed 1 98

Program the Thermomix to cook the stew at 98°C, speed 1, for 60 minutes.

Add the potatoes

After 1 hour, peel the potatoes, cut them into medium pieces and add them to the Thermomix bowl.

Cook with the potatoes

30 min/208°F/Speed 1 98

Program the Thermomix to cook the stew at 98°C, speed 1, for 30 minutes, or until the potatoes are tender.

Serve

Once ready, remove the onion if desired and serve the stew hot.
