Description

These Crostini are a feast for the senses! The combination of sweet, roasted peppers, creamy Burrata and the intense aroma of pistachio pesto is simply irresistible. I especially like making this recipe in the summer when the peppers are nice and juicy. The preparation is straightforward and the result is a real eye-catcher at any party or as a delicious antipasto. If you like it a little more hearty, you can add a few olives. A pleasure for every occasion!

Ingredients (13 ingredients)

  • 1 piece bread stick
  • 2 piece peppers
  • 100 g cured ham
  • 100 g burrata
  • basil
  • olive oil
  • fine salt
  • 100 g pistachios
  • 60 g olive oil
  • 20 g grated cheese
  • 4 foglie basil
  • 1 clove garlic
  • fine salt

Preparation (9 steps)

Prepare pistachio pesto

Thermomix® Setting
20 sec/Speed 8

Put 100 g pistachios, 20 g grated cheese, 4 basil leaves, 1 clove of garlic, 60 g olive oil and salt to taste in the mixing bowl and mix for 20 sec/speed 8 until a homogeneous paste is formed. If necessary, push down with the spatula and mix again.

Roast peppers in the oven

Place 2 whole peppers on a baking sheet lined with baking paper and roast in the preheated oven at 200°C for 35 minutes until the skin blisters.

Peel and fillet peppers

Remove the roasted peppers from the oven and let them cool slightly. Then peel off the skin and cut the peppers into fillets.

Season peppers

Arrange the pepper fillets on a plate and season with salt and olive oil.

Prepare bread

Halve the bread and place both halves with the cut side facing up on a baking sheet.

Toast bread

Drizzle the bread with a little olive oil and toast in the preheated oven at 200°C for 10-12 minutes until golden brown.

Top crostini

Spread the toasted bread slices with pistachio pesto and top with the pepper fillets.

Garnish with Prosciutto and Burrata

Top the crostini with some slices of raw ham and pieces of burrata.

Finalize and serve

Drizzle the crostini with a little olive oil and garnish with some basil leaves. Cut into pieces and serve.
