Description

These airy Polish yeast pancakes, also called Racuchy, are an absolute delight! I like to make them on weekends for breakfast or brunch. The dough is quickly prepared in the Thermomix® and the pancakes are fried golden brown in no time. They taste simply delicious with powdered sugar and homemade jam. If you like, you can also serve them with applesauce or maple syrup. A great recipe that is always well received by young and old! The preparation is uncomplicated and you usually have the ingredients at home. Try it!

Ingredients (9 ingredients)

  • 500 g Flour
  • 20 g Yeast
  • 2 piece Egg(s)
  • 2 tbsp Sugar
  • 400 ml Milk, lukewarm
  • 1 Prise(n) Salt
  • Oil
  • Powdered sugar
  • Jam

Prepare yeast

Add 400 ml lukewarm milk, 20 g yeast and 2 tbsp sugar to the mixing bowl and mix for 2 min./37°C/speed 2.

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Add 500 g flour, 2 eggs and 1 pinch of salt and knead for 2 min./kneading stage to a smooth dough.

Let the dough rise

Transfer the dough to a bowl, cover and let rise in a warm place for about 30 minutes until doubled in size.

Bake pancakes

Heat some oil in a coated pan. Add portions of dough to the pan with a tablespoon and bake golden brown on both sides.

Serve

Serve the finished pancakes with powdered sugar and jam.
