Description

These almond cookies with fine glaze are a delicious Thermomix® recipe for the Christmas season. The main ingredients are almonds, flour, eggs, sugar and white couverture. Preparation takes a total of 163 minutes, with active working time being around 30 minutes. The recipe yields approximately 60 servings and is ideal as finger food or dessert for the whole family.

Ingredients (10 ingredients)

  • 125 g Margarine
  • 150 g white couverture
  • 2 Stück Eggs
  • 200 g Flour
  • 125 g Almonds (ground)
  • 100 g Sugar
  • 4 EL Almond liqueur or almond syrup
  • 1 EL Almond liqueur or almond syrup
  • 30 Stück Almonds without skin
  • 50 g Icing sugar

Preparation (11 steps)

Melt margarine and couverture

Thermomix® Setting
3 min/122°F/Speed 2 50

Place 125 g margarine and 150 g white couverture in pieces into the mixing bowl and melt for 3 min./50°C/speed 2.

Let cool

Pour the melted margarine-couverture mixture out of the mixing bowl and let it cool.

Stir in eggs

20 sec/Speed 3

Put the cooled margarine-couverture mixture back into the mixing bowl. Add 2 eggs and mix for 20 sec./speed 3.

Mix in dry ingredients and knead in

Thermomix® Setting
2 min/Kneading speed

Add 200 g flour, 125 g ground almonds, 100 g sugar and 4 tbsp almond liqueur or almond syrup to the mixing bowl and knead for 2 min./kneading setting.

Chill dough

Remove the dough from the mixing bowl, wrap in foil and chill in the refrigerator for 2 hours.

Preheat oven

Preheat the oven to 200 °C (convection oven: 180 °C).

Form balls and bake

Form approx. 60 small balls from the dough, place on baking sheets lined with baking paper, leaving spaces in between. Press an almond half onto each ball. Place the baking sheets in the preheated oven and bake for approx. 18 minutes.

Let cool

Let the almond cookies cool slightly on a wire rack.

Prepare glaze

10 sec/Speed 10

Put 50 g icing sugar into the mixing bowl and pulverize for 10 sec./speed 10. Then add 1 tbsp almond liqueur or almond syrup and stir for 15 sec./speed 3.

Stir glaze

Thermomix® Setting
15 sec/Speed 3

Add 1 tbsp almond liqueur or almond syrup and stir for 15 sec./speed 3.

Apply glaze

Fill the glaze into a piping bag, cut off a very small corner of the piping bag and spray fine stripes over the still warm pastries.
