Description

This dish of stewed beef is a true comforting delight, perfect for autumn or winter evenings. The meat, melting and tasty, is stewed in a tomato sauce flavored with spices, which gives it an incomparable aromatic richness. Accompanied by long grain rice, this complete dish is ideal for a warm family meal. I often prepare it for the holiday season because it is easy to prepare in advance and warms hearts. Feel free to add a pinch of Espelette pepper to enhance the taste!

Ingredients (12 ingredients)

  • 600 g beef (chuck)
  • 500 g long grain rice
  • 400 g tomato pulp
  • 1 piece onion (large)
  • 2 clove garlic
  • 1 cube chicken broth
  • 4 piece medium carrots
  • Olive oil
  • 1 c. à c. cumin
  • 1 pinch paprika
  • 2 c. à c. chili puree
  • 33 cl water

Preparation of onions

Peel and cut the onion into four. Put the onion in the Thermomix bowl and chop for 3 Sec./Stufe 5. Scrape the sides of the bowl with the spatula.

Cooking the onions

Add the olive oil to the Thermomix bowl and cook for 3 Min./120°C/Stufe 1.

Preparation of the meat

Cut the beef into medium-sized pieces. Brown the beef in a pan with olive oil until golden brown on all sides. Set aside.

Sauce preparation

Add the tomato pulp, the garlic cloves cut in half and crushed, the cumin, the paprika, the chili puree and the chicken broth cube to the Thermomix bowl. Also add the browned beef. Mix gently with the spatula.

Stewing the beef

120 min/212°F/Speed 1/Linkslauf 100 Reverse

Add water to the Thermomix bowl. Close the bowl and cook for 120 Min./100°C/Stufe 1/Linkslauf. The meat must be melting.

Cooking the carrots

Meanwhile, bring water to a boil in a saucepan. Cut the carrots into thin, fairly short sticks and dip them in the simmering water. Cook for 7 minutes and drain.

Cooking the rice

Reheat the long grain rice as indicated on the packaging (in the microwave or in a saucepan).

Dressing

Arrange all the ingredients on the plates: the rice, the stewed beef and the carrots. Garnish with a sprig of fresh parsley.
