Description

These broccoli parmesan patties are an absolute highlight for every vegetable fan! I love to make them as a small snack in between meals or as a side dish for grilling. The broccoli is nicely chopped in the Thermomix® and formed into small patties with parmesan, egg and flour. Baking them in the oven makes them wonderfully crispy on the outside and nice and juicy on the inside. A dash of nutmeg rounds off the taste perfectly. Be sure to try it out, it's really easy and tastes simply delicious!

Ingredients (10 ingredients)

  • 1 piece Onion
  • 1 clove Garlic
  • 400 g Broccoli
  • 1 piece Egg
  • 30 g Grated Parmesan
  • 30 g Flour
  • to taste Salt
  • to taste Pepper
  • to taste Nutmeg
  • 1 tsp Olive oil

Preparation (5 steps)

Preheat oven

Preheat the oven to 200°C top/bottom heat.

Chop onion and garlic

3 sec/Speed 5

Put 1 peeled onion in the mixing bowl and chop for 3 sec./speed 5. Add 1 clove of garlic and chop for 3 sec./speed 7. Use the spatula to push everything down from the edge.

Chop broccoli

Thermomix® Setting
5 sec/Speed 5

Divide 400g broccoli into florets, place in the mixing bowl and chop for 5 sec./speed 5. Use the spatula to push everything down from the edge.

Prepare patty mixture

Thermomix® Setting
20 sec/Speed 4

Add 1 egg, the chopped onion and garlic, 30g grated Parmesan, 30g flour, salt, pepper and nutmeg to the mixing bowl and mix for 20 sec./speed 4.

Shape and bake patties

Form approx. 10 patties from the mixture and place on a baking sheet lined with baking paper. Brush the patties with 1 tsp olive oil and bake in the preheated oven for 10 minutes. Turn once and bake for another 10 minutes.
