Description

This recipe for pork medallions with mushroom cream sauce and Spätzle is a hearty main course that is ideal for festive occasions. The creamy mushroom cream sauce is prepared in the Thermomix®, while the medallions are fried in a pan. The preparation time is about 60 minutes and the dish is designed for 4 servings.   • 600 g Pork medallions
  • 250 g Onions
  • 40 g Butter
  • 500 g Champignons
  • 200 ml Vegetable broth
  • 100 ml White wine, dry
  • 1 TL Mustard
  • 1 TL Lemon juice
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 200 ml Cream
  • 1 EL Parsley, chopped
  • 400 g Flour
  • 4 Stück Eggs
  • 100 ml Mineral water
  • 1 TL Salt
  • nach Geschmack Nutmeg

Preparation (10 steps)

Chop onions

Put 250g onions into the mixing bowl and chop for 3 sec./speed 5.

Sauté onions

Add 40g butter to the chopped onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add and sauté champignons

Thermomix® Setting

Add 500g champignons, cleaned and sliced, to the mixing bowl and sauté for another 5 min./120°C/speed 1.

Deglaze with broth and simmer

Thermomix® Setting

Add 200ml vegetable broth, 100ml white wine, 1 tsp mustard, 1 tsp lemon juice, salt and pepper to the champignons in the mixing bowl and simmer for 10 min./100°C/speed 1.

Add cream and finish sauce

Add 200ml cream and 1 tbsp chopped parsley to the mixing bowl and stir in for another 5 min./90°C/speed 1. Leave the measuring cup in place.

Prepare Spätzle dough

Thermomix® Setting
2 min/Kneading speed

Put 400g flour, 4 eggs, 100ml mineral water, 1 tsp salt and nutmeg into the mixing bowl. Replace the knife with the Patix dough knife. Process for 2 min./kneading stage to a smooth dough.

Cook Spätzle

Prepare Spätzle according to package instructions. Alternatively, press the Spätzle dough in portions through a Spätzle press into boiling salted water and let it steep until cooked.

Fry meat

Season 600g pork medallions with salt and pepper. Fry in a separate pan with some oil from both sides until they are cooked.

Add meat to sauce

2 min/194°F/Linkslauf Speed 1 194°F Reverse

Add the fried pork medallions to the mushroom cream sauce in the mixing bowl and heat for 2 min./90°C/reverse rotation speed 1. Leave the measuring cup in place.

Serve

Drain the Spätzle and serve together with the pork medallions and the mushroom cream sauce.
