Description

This dish is a feast for the senses! The tender saddle of venison, coated in an aromatic wild garlic crust, harmonizes perfectly with the savory spaghetti. I always make the wild garlic crust a little thicker, so it becomes particularly crispy. The green asparagus brings a fresh touch to the dish. A hint of Parmesan rounds it all off. Ideal for a festive meal in spring or at Easter. The preparation takes a little time, but it's worth the effort! If you like, you can add a few roasted pine nuts to the pasta.

Ingredients (8 ingredients)

  • 500 Gramm Saddle of venison, trimmed
  • 500 Gramm Green asparagus
  • 500 Gramm Spaghetti
  • 2 x Dry bread rolls
  • 1 Bündel Fresh wild garlic
  • 50 Gramm Butter
  • 1 x Salt, pepper and sugar
  • 1 Stück Parmesan cheese

Preparation (9 steps)

Make breadcrumbs

20 sec/Speed 10

Place the dry bread rolls in the mixing bowl and process for 20 sec/speed 10 to make fine breadcrumbs. Use a spatula to scrape the breadcrumbs from the edge.

Chop wild garlic

Place the washed and drained wild garlic in the mixing bowl and chop for 5 sec/speed 5. Use a spatula to scrape the wild garlic from the edge.

Mix wild garlic breadcrumbs

Thermomix® Setting
10 sec/Speed 4

Add the chopped wild garlic to the breadcrumbs in the mixing bowl and mix for 10 sec/speed 4. Use a spatula to mix everything well.

Prepare wild garlic breadcrumb butter

Add 50g butter to the mixing bowl and melt for 3 min/50°C/speed 2.

Mix wild garlic breadcrumb butter

Thermomix® Setting
15 sec/Speed 3

Add the wild garlic breadcrumbs to the melted butter in the mixing bowl and stir for 15 sec/speed 3. If necessary, add some breadcrumbs or butter to achieve the desired consistency.

Shape wild garlic crust

Spread and press the wild garlic breadcrumb butter mixture onto baking paper in the size of the saddle of venison to a thickness of 1-1.5 cm. Cover with baking paper, weigh down and place in the freezer for 30 minutes.

Cook spaghetti

8-10 min/212°F/Speed 1 100

Add 1 liter of water and 1 tsp of salt to the mixing bowl and bring to a boil for 10 min/100°C/speed 1. Then add the spaghetti through the lid opening and cook according to package directions (approx. 8-10 min)/100°C/speed 1. Use simmering basket.

Prepare asparagus

10 min/248°F/Gentle stir speed 120

Remove the woody ends of the asparagus and cut the asparagus spears into pieces. Add asparagus pieces and 50g butter to the mixing bowl and cook for 10 min/120°C/speed gentle stir. Season with salt and sugar.

Mix pasta with asparagus

Drain the cooked spaghetti and return to the mixing bowl. Add the cooked asparagus and mix for 15 sec/reverse/speed 2.
