Description

This braised vegetable dish with polenta is a wonderfully warming dish for the cooler days. I love how the sweetness of the carrots and peppers harmonizes with the spicy celery and the strong mountain cheese. The cheese makes the polenta particularly creamy and forms a great contrast to the crunchy vegetables. A dish that can be prepared well and still tastes good the next day. Perfect for a cozy dinner!

Ingredients (18 ingredients)

  • 2 piece Carrots
  • 1 piece Onion
  • 1 piece Zucchini
  • 2 piece Yellow bell peppers
  • 4 piece Celery stalks
  • 1 tbsp Butter
  • 50 ml White wine
  • 400 g Chopped tomatoes - canned
  • to taste Salt
  • to taste Pepper
  • 3 tbsp Chopped parsley
  • 3 tbsp Chopped chives
  • 300 ml Vegetable broth
  • 300 ml Milk
  • 4 Zweige Thyme - plucked
  • 1 pinch Nutmeg
  • 70 g Polenta - (Cornmeal)
  • 150 g Aged mountain cheese - grated

Preparation (9 steps)

Prepare vegetables

Clean or peel the carrots, onion, zucchini, bell peppers and celery stalks and cut into bite-sized pieces. Set aside.

Sauté vegetables

Put 1 tbsp of butter in the mixing bowl and melt for 3 min./120°C/speed 1.

Braise vegetables

5 min/248°F/Linkslauf Speed 1 120 Reverse

Add the prepared vegetables to the mixing bowl and sauté for 5 min./120°C/reverse speed 1.

Finish braised vegetables

20 min/212°F/Linkslauf Speed 1 100 Reverse

Add 50 ml white wine and 400 g chopped tomatoes (canned). Season with salt and pepper and simmer for 20 min./100°C/reverse speed 1.

Add herbs

Add 3 tbsp chopped parsley and 3 tbsp chopped chives and stir in for 10 sec./speed 1/reverse.

Prepare polenta

5 min/212°F/Speed 2 100

Add 300 ml vegetable broth, 300 ml milk, 4 sprigs of plucked thyme and 1 pinch of nutmeg to the mixing bowl and bring to a boil for 5 min./100°C/speed 2.

Cook polenta

15 min/194°F/Speed 2 90

Sprinkle in 70 g polenta (cornmeal) and stir in for 15 min./90°C/speed 2. Use a spatula to loosen the polenta from the bottom.

Melt cheese

Thermomix® Setting
2 min/140°F/Speed 2 60

Add 150 g grated aged mountain cheese and stir in for 2 min./60°C/speed 2 until the cheese has melted.

Serve

Serve the polenta with the braised vegetables and fresh herbs.
