Description

This Thermomix® recipe for mashed potatoes with mushrooms in red wine sauce is a vegetarian main course with potatoes, mushrooms and red wine. The preparation takes about 45 minutes and yields 4 servings. Ideal for a festive, hearty and warm meal in autumn or winter. Suitable as a family meal or for special occasions.

  • 1000 g Potatoes
  • nach Geschmack Salt
  • 4 Glas Mushrooms
  • 1 Stück Onion
  • 5 Zweig Thyme
  • 2 EL Olive oil
  • 100 ml dry Red wine
  • 100 ml Vegetable stock
  • nach Geschmack Pepper
  • nach Geschmack Sugar
  • 5 g pickled Truffle
  • 110 g Butter
  • 1 Spritzer Lemon juice
  • 200 ml Milk
  • nach Geschmack grated Nutmeg

Preparation (8 steps)

Prepare and cook potatoes

Peel, wash and halve 1 kg potatoes. Place the halved potatoes in the simmering basket. Fill 1 litre of water into the mixing bowl, insert the simmering basket and season with salt. Cook for 20 min./Varoma/speed 1.

Prepare mushrooms

Place 4 jars of mushrooms in a large sieve and drain well.

Prepare onion and thyme

Peel and quarter 1 onion. Wash and shake dry 5 sprigs of thyme. Pluck and chop the leaves from 3 stems. Set aside the remaining leaves for garnish.

Chop and sauté onions

Place the quartered onion in the mixing bowl and chop for 3 sec./speed 5. Scrape down with the spatula. Add 2 tbsp olive oil and sauté for 3 min./120°C/speed 1.

Add mushrooms and simmer

8 min/212°F/Linkslauf Speed 1 100 Reverse

Add the drained mushrooms to the mixing bowl. Add 100 ml dry red wine and 100 ml vegetable stock. Season with salt, pepper and sugar. Simmer for 8 min./100°C/reverse speed 1.

Prepare truffle butter

Chop 5 g pickled truffle very finely. Place 60 g butter in a bowl and beat until fluffy with a hand mixer. Stir in the chopped truffle and season with salt, pepper and 1 dash of lemon juice.

Prepare mashed potatoes

Remove the cooked potatoes from the simmering basket and place in the mixing bowl. Heat 200 ml milk and 50 g butter in a small saucepan. Add the hot milk mixture to the potatoes in the mixing bowl. Stir for 20 sec./speed 4. Season with salt and grated nutmeg. Add 1 tsp truffle butter and the chopped thyme leaves and stir in for 5 sec./reverse speed 2.

Arrange

Arrange the puree with the red wine mushrooms on plates. Serve with remaining truffle butter and garnish with the remaining thyme leaves.
