Description
This Mediterranean game sausage spice mixture is ideal for preparing homemade sausages. The mixture contains a variety of herbs and spices that give the sausage a hearty and aromatic profile. Preparation (3 steps)
Chop spices
Place all ingredients, consisting of 20 g pepper, 10 g allspice, 10 g coriander, 5 g mace, 5 g caraway, 5 g marjoram, 5 g thyme, 5 g rosemary, 5 g sage, 5 g garlic granules, 5 g onion granules, 5 g celery seed, 5 g mustard seed, 20 g sweet paprika powder, 5 g hot paprika powder, 5 g chili powder, 10 g dextrose and 40 g table salt, into the mixing bowl and chop for 20 sec./level 10.
Mix spice mixture
Push the chopped spices down in the mixing bowl with the spatula and then mix for 10 sec./level 3.
Store spice mixture
Transfer the finished spice mixture to an airtight container and store until use.
