Description

This single portion mimosa cake is a delicious and spectacular dessert, perfect for celebrating spring or for a special occasion. The custard, prepared with the Thermomix®, is smooth and velvety, while the sponge cake, soft and light, is crumbled and alternated with the cream in individual glasses. A touch of limoncello adds a fresh and citrusy aroma, but can be replaced with milk for a non-alcoholic version. Easy to prepare and customize, this cake is a guaranteed success! I often prepare it for Easter, it is a delicious alternative to the classic colomba.

  • 3 piece Eggs
  • 150 piece Sugar
  • 150 g 00 Flour
  • 30 g Corn starch
  • 1 pinch Salt
  • 1 pinch Vanilla
  • 250 ml Milk
  • 50 piece Sugar
  • 25 g Corn starch
  • 3 piece Yolks
  • 1 pinch Salt
  • 1 pinch Vanilla
  • 50 ml Limoncello

Preparation of the custard

Thermomix® Setting

Pour the egg yolks, corn starch, sugar, vanilla and a pinch of salt into the bowl. Mix for 20 Sec./Speed 3. Add the milk a little at a time and mix for another 10 Sec./Speed 3. Cook for 10 Min./90°C/Speed 2. Transfer the custard to a plate, cover it with plastic wrap making it adhere well to the cream and let it cool.

Preparation of the sponge cake

Pour the eggs and salt into the bowl. Whip for 10 Min./Speed 4. Add the sugar and vanilla and continue to whip for another 10 Min./Speed 4. Add the flour and corn starch and mix for 20 Sec./Speed 3.

Baking the sponge cake

Turn on the static oven at 180°C. Grease and flour a mold, then pour the dough into it. Bake in the oven for 40 minutes. When the sponge cake is cooked, take it out of the oven and let it cool.

Assembly of the cake

Remove the edge and the dark part from the sponge cake and cut it into cubes or crumble it with your hands. Pour the crumbs on the bottom of a glass, moisten with limoncello and add some custard. Cover with more sponge cake crumbs, moisten with limoncello and more custard. Finish with the sponge cake.

Cooling and serving

Store in the refrigerator for a few hours before serving.

This single portion version is a way to honor that tradition, making it more modern and suitable for today's needs. The heart of this cake is the custard, prepared with the Thermomix® for an impeccable consistency. The egg yolks give richness and creaminess, while the corn starch makes it velvety and stable. Sugar, of course, sweetens everything, and a pinch of salt enhances the flavors. Finally, vanilla adds a touch of fragrance and elegance. The sponge cake, light and soft, is the other fundamental element. The eggs, whipped for a long time with the sugar, create an airy and spongy base, perfect for absorbing the cream and limoncello. The 00 flour and corn starch help to make it even more delicate. To prepare the custard with the Thermomix®, it is important to carefully follow the indicated times and temperatures. Make sure the milk is at room temperature to avoid lumps. Once cooked, the cream must be cooled quickly to avoid the formation of a film on the surface. For the sponge cake, it is essential to whip the eggs for a long time, until a frothy and light mixture is obtained. In this way, the cake will be soft and light. When adding the flour and corn starch, do it gently, with upward movements, so as not to deflate the mixture. For a vegetarian version, make sure that the vanilla used is without animal derivatives. For a vegan version, you can replace the eggs with aquafaba (the cooking water of chickpeas) and the milk with vegetable milk (soy, almond, oat). For a touch of different flavor, you can add grated lemon zest to the custard, or a pinch of cinnamon. Instead of limoncello, you can use another liqueur (for example, Grand Marnier or Cointreau), or simply milk or fruit juice.
