Description

This minestrone is a real comfort food, perfect for autumn evenings! Rich in fresh, seasonal vegetables, it's a healthy and nutritious dish that warms the heart. I often prepare it, varying the vegetables according to what I find at the market. The secret to a tasty minestrone? A good vegetable broth and a pinch of baking soda to keep the colors of the vegetables alive! Ideal for a light lunch or a family dinner. It is prepared in less than an hour and is an excellent solution for getting even the little ones to eat vegetables. Try it, you won't regret it!

Ingredients (15 ingredients)

  • 0.5 piece onions
  • 2 piece carrots
  • 2 piece celery stalks
  • 1 piece large zucchini
  • 2 piece potatoes
  • 5 foglie chard
  • 200 g frozen beans
  • 200 g frozen peas
  • 2 l water
  • 0.5 bicchiere tomato pulp
  • 50 g mushroom mix with porcini mushrooms
  • 1 tbsp coarse salt
  • 0.5 tsp baking soda
  • extra virgin olive oil
  • fine salt

Preparation (4 steps)

Chop the vegetables

Thermomix® Setting

Put half an onion, the carrots and the celery stalks in the bowl. Chop for 5 Sec./Level 5.

Add the other vegetables

Add the zucchini cut into small pieces, the potatoes into small pieces, the frozen beans and the frozen peas into the bowl.

Cook the vegetables

Thermomix® Setting
30 min/212°F/Speed 1 100

Add the chard cut into pieces, 2 l of water, ½ glass of tomato pulp, 50 g of mushroom mix with porcini mushrooms, 1 tablespoon of coarse salt and ½ teaspoon of baking soda. Cook for 30 Min./100°C/Level 1.

Add extra virgin olive oil and fine salt to taste before serving.
