Description

These lemon breaded mini chicken escalopes are a real treat! I often prepare them for a Sunday brunch or an aperitif with friends. The crispy breading and fresh lemon juice add an irresistible touch of freshness. It's a simple and quick recipe, perfect for weeknights when you're short on time. The chicken remains tender and juicy inside, a real delight! They can also be served with a small green salad for a more complete meal. A real favorite at home!

Ingredients (7 ingredients)

  • 6 piece Chicken escalope
  • 200 g Breadcrumbs
  • 1 piece Lemon
  • 3 piece Egg
  • Frying oil
  • Salt
  • Pepper

Preparation of the escalopes

Cut the 6 chicken escalopes into small cubes on a cutting board. Set aside.

Preparation of the egg breading

Thermomix® Setting

In the Thermomix bowl, break 3 eggs, add a pinch of salt and a pinch of pepper. Mix 10 Sec./Level 4.

Breading the chicken cubes

Place the small cubes of chicken escalopes in the bowl containing the beaten eggs, then cover them with 200 g of breadcrumbs. Mix gently by hand to coat each piece well.

Cooking the breaded escalopes

In a large frying pan, heat the frying oil over medium-high heat. Put the chicken escalopes to fry without incorporating too many pieces to turn them easily. Cook until golden brown and cooked through.

Draining and cooking the rest of the chicken

Once cooked through, remove the pieces of chicken as you go and place them on paper towels. Cook all the remaining pieces of chicken.

Preparation of lemon juice

While the chicken is cooking, rinse the lemon or lemons, cut it in half. Remove the seeds, then squeeze to extract the juice into a bowl.

Service

At the time of tasting, remove the chicken from the paper towel and serve it on a plate with lemon juice.
