Description

These small chocolate Bundt cakes are a real treat for all chocolate lovers! With a hint of coffee and crunchy mocha beans, they are not only visually appealing, but also a culinary highlight. I especially like to bake them for Christmas or birthdays, as they are wonderful as a small gift. The preparation is a bit more complex, but the result is worth it. The combination of delicate chocolate and the fine coffee aroma makes these mini Bundt cakes an absolute favorite recipe. They are juicy, chocolatey and simply irresistible!

Ingredients (11 ingredients)

  • 50 g Bittersweet chocolate
  • 1 tsp Coffee powder
  • 40 g Mocha beans (bittersweet chocolate)
  • 125 g Butter or margarine
  • 125 g Sugar
  • 1 pinch Salt
  • 2 piece Eggs (size M)
  • 200 g Flour
  • 0.5 Pck. Baking powder
  • 125 ml Milk
  • 50 g Couverture

Preparation (12 steps)

Chop chocolate

Thermomix® Setting
5 sec/Speed 8

Place 50 g of bittersweet chocolate in pieces in the mixing bowl and chop for 5 sec./speed 8. Then transfer.

Melt chocolate

Thermomix® Setting
3 min/122°F/Speed 2 50

Return the chopped chocolate to the mixing bowl and melt for 3 min./50°C/speed 2.

Prepare coffee

Dissolve 1 tsp coffee powder in 1 tbsp hot water and set aside.

Chop mocha beans

Thermomix® Setting
3 sec/Speed 5

Place 30 g mocha beans (bittersweet chocolate) in the mixing bowl and chop for 3 sec./speed 5. Transfer.

Prepare dough

Thermomix® Setting
2 min/Speed 4

Put 125 g butter or margarine, 125 g sugar and 1 pinch of salt in the mixing bowl and stir until creamy for 2 min./speed 4.

Add eggs

Thermomix® Setting
30 sec/Speed 4

Add 2 eggs (size M) one after the other through the lid opening and stir in for 30 sec./speed 4.

Stir in flour mixture and milk

Thermomix® Setting
1 min/Speed 3

Mix 200 g flour and ½ pack baking powder. Add alternately with 125 ml milk to the mixing bowl and stir in for 1 min./speed 3.

Fold in chocolate and mocha beans

Thermomix® Setting
30 sec/Speed 2

Add the melted chocolate, the dissolved coffee and the chopped mocha beans to the mixing bowl and stir in for 30 sec./speed 2.

Bake

Pour the dough into a greased and floured Bundt cake pan (700 ml capacity). Bake in a preheated oven (electric oven: 175 °C/ convection oven: 150 °C/ gas: level 2) for 25–35 minutes (stick test).

Let cool

Remove the cake and let it cool for about 10 minutes. Turn out onto a wire rack and let cool completely.

Melt couverture

Thermomix® Setting
3 min/122°F/Speed 2 50

Place 50 g of couverture in pieces in the mixing bowl and chop for 5 sec./speed 8. Then melt for 3 min./50°C/speed 2.

Decorate

Decorate the cooled cake with the melted couverture and press the remaining 10 g of mocha beans onto the top edge. Let it dry.
