Description

This juicy carrot cake is a delicious recipe for the Thermomix®. With fresh carrots, walnuts and cinnamon, it is an aromatic cake for coffee and cake. Preparation is straightforward and takes about 90 minutes. Ideal for birthdays or a cozy brunch.

Ingredients (9 ingredients)

  • 6 Stück Eggs
  • 250 g Sugar
  • 200 g Oil
  • 310 g Flour
  • 10 g Baking powder
  • 10 g Cinnamon
  • 0.5 TL Vanilla
  • 1 Tasse Carrots (finely grated, water squeezed out)
  • 20 g Walnuts (chopped)

Preparation (5 steps)

Whisk eggs, sugar and vanilla

Add 6 eggs, 250 g sugar and 0.5 tsp vanilla to the mixing bowl and whisk for 5 min./speed 4 until the mixture is creamy and light.

Add carrots

Reduce the speed to speed 2. Gradually add 1 cup of finely grated carrots (squeeze out the water beforehand) through the lid opening and stir in for 30 sec./speed 2.

Stir in oil and walnuts

Add 200 g oil and 20 g chopped walnuts to the mixing bowl and stir in for 20 sec./speed 2 until everything is just mixed.

Add flour, baking powder and cinnamon

Add 310 g flour, 10 g baking powder and 10 g cinnamon (which have been sifted three times) to the mixing bowl and fold in for 20 sec./speed 2 reverse. Important: Do not stir too much! Only carefully fold in.

Bake dough

Pour the dough into a mold (e.g. chiffon mold with a diameter of 28 cm that has been greased with separating spray). Bake in a preheated oven at 170 °C on the middle rack for approx. 1 hour to 1 hour and 15 minutes. Do a doneness test with a wooden skewer.
