Description

This carrot dish in lemon sauce is a real classic that I always enjoy preparing. The combination of the sweetness of the carrots and the fresh acidity of the lemon is simply unbeatable. With the Thermomix® the preparation is super easy and fast. Perfect as a side dish to fish or meat, but also as a light vegetarian main course. A touch of sesame and fresh parsley round off the dish perfectly. Try it, you will be thrilled!

Ingredients (11 ingredients)

  • 1 kg Carrots
  • 0.01 pinch Salt
  • 25 g Sesame
  • 0.5 bunch Parsley
  • 1 piece untreated Lemon
  • 30 g Butter or margarine
  • 30 g Flour
  • 125 g Whipping cream
  • 0.01 pinch Pepper
  • 0.01 pinch Lemon pepper
  • 0.01 pinch Sugar

Preparation (11 steps)

Prepare carrots

Clean, wash, peel and cut 1 kg of carrots into pieces.

Cook carrots

Thermomix® Setting
15 min/212°F/Speed 1 100

Put 750 ml water and salt into the mixing bowl. Insert the steamer basket, add the chopped carrots and cook for 15 min./100°C/speed 1.

Roast sesame

Roast 25 g of sesame in a pan without fat until golden brown and set aside.

Chop parsley

Wash ½ bunch of parsley, pat dry and chop roughly. Set aside a few leaves for garnish.

Prepare lemon

Wash 1 untreated lemon thoroughly, peel the zest with a julienne peeler and squeeze out the juice.

Collect carrot water

After the cooking time, drain the carrots and collect 375 ml of the carrot water.

Prepare roux

Thermomix® Setting

Put 30 g butter or margarine in the mixing bowl and melt for 3 min./120°C/speed 1. Add 30 g flour and sauté for 2 min./100°C/speed 2.

Prepare sauce

Thermomix® Setting
5 min/212°F/Speed 2 100

Add 375 ml carrot water, 125 g whipping cream and lemon juice and bring to the boil for 5 min./100°C/speed 2.

Thermomix® Setting
1 min/194°F/Speed 2 90

Season the sauce with salt, pepper, lemon pepper and 1 pinch of sugar and stir for 1 min./90°C/speed 2.

Add carrots

Thermomix® Setting
2 min/194°F/Linkslauf Speed 1 90 Reverse

Add the cooked carrots to the sauce and heat for 2 min./90°C/reverse rotation speed 1.

Serve

Arrange the carrots in lemon sauce on a plate and sprinkle with sesame, lemon julienne and chopped parsley. Garnish with remaining parsley and serve.
