Description

This dish is a great combination of slightly bitter chicory, a creamy parsley sauce and a sweet carrot-potato puree. I especially like to make it in autumn when the chicory is in season. The preparation is a bit more complex, but it's worth it! The puree can also be prepared well in advance and kept warm. If you like, you can add some grated nutmeg. A delicious vegetarian dish that will also convince meat eaters!

Ingredients (12 ingredients)

  • 750 g floury potatoes
  • 750 g Carrots
  • Salt
  • Pepper
  • Nutmeg
  • 1 piece Onion
  • 30 g Butter/Margarine
  • 20 g Flour
  • 200 ml Cooking cream
  • 1.5 tsp Vegetable stock
  • 800 g Chicory
  • 1 bunch Parsley

Preparation (9 steps)

Prepare potatoes and carrots

Peel, wash and cut 750 g floury potatoes and 750 g carrots into pieces. Put into the mixing bowl and add 500 ml water and 1 tsp salt.

Drain potatoes and carrots

After the time has elapsed, drain the potatoes and carrots through the simmering basket, collecting the cooking water.

Chop onion

Peel and quarter 1 onion and put it in the mixing bowl. Chop 3 sec./level 5.

Sauté onion

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 3 tbsp (30 g) butter/margarine and sauté 3 min./120°C/level 1.

Prepare sauce

Thermomix® Setting
5 min/212°F/Speed 2 100

Add 2 (20 g) flour and sauté 1 min./100°C/level 2. Add 250 ml cooking water, 200 ml cooking cream and 1 tsp vegetable stock and simmer 5 min./100°C/level 2.

Add parsley

Thermomix® Setting

Wash 1 large bunch of parsley, shake dry, chop finely and add to the mixing bowl except for 1 tbsp. Season with salt and pepper and stir 10 sec./level 3.

Prepare puree

Thermomix® Setting
10 sec/Speed 3

Put potatoes and carrots back into the mixing bowl and puree 20 sec./level 4. Season with salt, pepper and nutmeg and stir for another 10 sec./level 3.

Prepare chicory

Clean, wash and halve 4 chicory (à ca. 200 g) lengthwise. Heat 1 tbsp fat in a coated pan (with lid). Fry the chicory in it on all sides. Season with salt and pepper. Add 100 ml water and 1/2 tsp vegetable stock. Bring to a boil and simmer covered for 3-4 minutes.

Arrange

Remove chicory. Arrange everything and sprinkle with remaining parsley.
