Description

This chocolate mousse is a real delight for dark chocolate lovers. I often prepare it for dinners with friends, and it always makes a splash. Its airy texture and intense cocoa flavor make it a perfect dessert for all occasions. Preparation is simple and quick with the Thermomix®, but the secret lies in the resting time in the refrigerator, which allows the mousse to take on an ideal consistency. Feel free to add a touch of fleur de sel to enhance the flavors. A gourmet and easy to make dessert!

Ingredients (3 ingredients)

  • 1 pinch salt or fine salt
  • 6 piece eggs
  • 200 g dark chocolate

Preparation (6 steps)

Melted chocolate

Thermomix® Setting
5 min/122°F/Speed 2 50

200 g of dark chocolate in pieces in the bowl. Melt for 5 Min./50°C/Stufe 2.

Egg separation

Separate the yolks from the whites of 6 eggs. Reserve the yolks. Put the whites in the clean, dry bowl with 1 pinch of salt. Insert the whisk.

Beaten egg whites

Thermomix® Setting
3 min/Speed 3.5

Beat the egg whites until stiff with the whisk for 3 Min./Stufe 3.5. Remove the beaten egg whites and set aside.

Chocolate and yolks mixture

Thermomix® Setting
20 sec/Speed 3

Add the egg yolks to the bowl with the melted chocolate. Mix for 20 Sek./Stufe 3.

Incorporation of whites

Remove the chocolate-yolks mixture from the bowl. Gently incorporate 1/3 of the beaten egg whites into the chocolate-yolks mixture using a spatula. Then add the rest of the beaten egg whites gradually, gently lifting the mass so as not to break the whites.

Refrigeration

Divide the mousse into individual ramekins. Leave to set in the refrigerator for at least 3 hours before serving.
