Description

This chocolate mousse is a simple and quick delight to prepare, perfect for a sweet craving or an impromptu dessert. I often make it when I have surprise guests and it always has its effect! The secret lies in the quality dark chocolate, which brings an incomparable intensity and depth of taste. The texture is incredibly smooth, almost velvety, thanks to the technique of delicate incorporation of whipped egg whites. A little patience during cooling in the refrigerator, and you are rewarded with a light and airy mousse. Ideal for chocolate lovers!

Ingredients (6 ingredients)

  • 1 packet vanilla sugar
  • 1 pinch salt
  • 1 noix light butter
  • 1 c à s water
  • 4 piece eggs
  • 150 g dark chocolate (70% cocoa)

Preparation (5 steps)

Melted chocolate

3 min/122°F/Speed 2 50

Put 150g of dark chocolate (70% cocoa), 1 tbsp of water and 1 knob of light butter in the Thermomix bowl. Melt for 3 Min./50°C/Stufe 2.

Incorporated egg yolks

20 sec/Speed 3

Add 4 egg yolks to the melted chocolate in the Thermomix bowl. Mix for 20 Sek./Stufe 3.

Whipped egg whites

Thermomix® Setting
3 min/Speed 3.5

Insert the whisk. Add 4 egg whites, 1 sachet of vanilla sugar and 1 pinch of salt into the Thermomix bowl. Beat until stiff peaks form for 3 Min./Stufe 3.5.

Delicate mixing

Remove the whisk. Pour the whipped egg whites into the Thermomix bowl with the chocolate and egg yolk mixture. Mix gently by hand so as not to break the whites.

Cooling

Pour the mousse into individual cups and place in the refrigerator for at least 3 hours before serving.
