Description

These gingerbread muffins are a wonderful treat for the Advent season! I bake them every year, and they are always a hit. The scent of gingerbread spice, cinnamon and cardamom fills the whole house and immediately puts you in the Christmas spirit. The candied pineapple and almonds provide a fruity and nutty note. If you prefer something simpler, you can use jam instead of pineapple. The muffins are quick to prepare and taste good both warm and cold. Perfect for Advent coffee or as a small gift from the kitchen. They are simply irresistible!

Ingredients (15 ingredients)

  • 30 g Honey
  • 30 g Brown sugar
  • 20 g Butter
  • 1 tbsp Milk
  • 80 g Flour
  • 1 tsp Baking powder
  • 1 Msp. Cardamom
  • 1 Msp. Clove(s) ground
  • 1 Msp. Gingerbread spice
  • 1 tsp Cinnamon
  • 1 tsp Cocoa powder
  • 1 piece Egg(s)
  • 30 g Almond(s)
  • 30 g Pineapple candied
  • 1 tbsp Orange juice

Preparation (7 steps)

Preheat oven

Preheat the oven to 175°C top/bottom heat.

Heat honey, sugar, butter and milk

Put 30 g honey, 30 g brown sugar, 20 g butter and 1 tbsp milk in the mixing bowl and heat for 3 min./50°C/speed 2 until the sugar has dissolved.

Prepare pineapple

Thermomix® Setting
2 min/212°F/Speed 1 100

Cut 30 g candied pineapple into small pieces. Put 1 tbsp orange juice in the mixing bowl and add the pineapple. Heat for 2 min./100°C/speed 1. Then let it cool down.

Mix dry ingredients

Thermomix® Setting
10 sec/Speed 4

Put 80 g flour, 1 tsp baking powder, 1 pinch of cardamom, 1 pinch of ground cloves, 1 pinch of gingerbread spice, 1 tsp cinnamon and 1 tsp cocoa powder in the mixing bowl and mix for 10 sec./speed 4.

Mix liquid and dry ingredients

20 sec/Speed 3

Add the cooled honey-milk mixture to the dry ingredients in the mixing bowl. Add the orange-pineapple and stir for 20 sec./speed 3. Use a spatula to loosen everything from the edge.

Add almonds and egg

Thermomix® Setting
15 sec/Speed 3

Add 30 g almonds and 1 egg to the mixing bowl and stir in for 15 sec./speed 3. Use a spatula to loosen everything from the edge.

Bake muffins

Fill the dough into 6 muffin tins and bake in the preheated oven at 175°C top/bottom heat for approx. 25 minutes.
